Oh, brand new Planetbox, how we love thee! Anything that makes my life a little more organized with less thinking is for me!

I decided to start a couple weeks out from Valentine’s Day to get some ideas cooking. I love pastry/cookie cutters for preschool lunches. They make perfect bite sized goodness, and then kids have to fill up on fruits and vegetables. Muhaha! Sneaky mom! The sandwiches are Justin’s Almond Butter with small pieces of fresh strawberries inside. A few raspberries are in with the mini sammies. To the left are orange slices with grape tomatoes stuck in between. In the top left compartment are carrot and celery sticks and the treat in the center is a Hail Merry brand raw vegan vanilla coconut macaroon. The top row of tiny heart silicone cups are filled with blueberries and dried apricot hearts. Yum! This lunch is for my 4 year old packed in her Planetbox stainless lunchbox.

Miss A (3 years old) has her hearts lunch in our new LunchBots Trio. In the left compartment are raspberries and strawberries. At the top are blueberries and carrot sticks and in the bottom compartment are the same mini heart love sandwiches.

Birds make me happy.  I don’t have a specific reason.  They just cheer me up so I’m hoping that my kids find the same joy in them that I do.  All the lunches today are vegan (meatless and dairy free), soy-free, gluten-free and all ingredients are organic.

Miss G’s lunch (4 years old) is spinach rice noodles with a small bit of Earth Balance coconut spread mixed in and Field Roast sundried tomato (meatless) deli slices on top shaped into stars and a bird.  In her Easy Lunchboxes container at the top are heart shaped strawberries and watermelon birds.

Oh my stars snack bentoAlong with lunch is her preschool snack in a LunchBots Duo stainless container.  In the left compartment are carrot sticks, blueberries and dried apricot stars, and in the right are sugar snap peas, a Crimson Gold apple and a “snow ball” made of dates and raisins rolled in coconut.

Matryoshka with stars bentoIn our fancy matryoshka bento box is little sister’s lunch.  On the left side she has raisins in the flower cup with star shaped dried apricots.  Below that is jasmine rice with carrot mini stars and sugar snap peas.  On the right side are watermelon stars and below are bird-shaped sundried tomato deli slices and cucumbers.

Spinach with black bean saladAbove is the elusive mom lunch.  I am usually on the run, but decided to make a salad today.  I had a giant pile of organic spinach, about a cup of black beans, bird shaped cucumbers and some daikon I found at my local Whole Foods.  I have to say that the daikon wasn’t a good match with the salad.  I read later that its taste softens with cooking which is what I’ll do with the rest.  It was a little bitter to eat raw. On the sides are avocado slices.  For my dressing I topped with a bit of red wine vinegar.

It’s a rainy, cooler day here in Florida today so there’s some sunshine inside the lunchbox.  I made Miss G some vegan BLTs for lunch.  I found these mini slider buns at Whole Foods in the bread section, and they’re they perfect size for preschool lunches.  I cooked some vegan tempeh (fermented soy) bacon.  I use a tiny bit of Earth Balance vegan mayo on the bun, then romaine leaves and sliced tomatoes.  Above the mini sandwiches are grape tomatoes and pineapple pieces.  In the top left of her Easy Lunchboxes container are honeydew melon pieces and in the top right is a sunshiny face clementine.

Welcome to Wednesday.  I’m on day 2 of a diet cleanse and exactly 2 days that I’ve had a headache.  I cut out a number of things.  By far the hardest are soy and caffeine.   It’s a great way to find out how addicted to caffeine I am.  My answer was VERY addicted.  We’ll see how I do at the end of two weeks.  Just hoping the headaches don’t last that long!

Miss G is off to school with a flowery sandwich made with a Lunch Punch Sandwich cutter on Rudi’s Whole Wheat bread.  Click on the photo below to find more fun sandwich cutters.  The flower in the middle is made with the heel of the bread loaf.  In the top left of her Easy Lunchboxes container are kiwi and blueberries and in the top right are grape tomatoes.

My two year old has a LunchBots Quad with mini chickpea burger halves in the top left and bottom right compartments with mini carrots and at the opposite corners are kiwi slices and pineapple chunks.

Barbeque tofu wrap by bentoriffic

Fun colors make almost anything look delicious.  I use a lot of silicone baking cups to entice my kids to eat.  This tortilla wrap is leftovers from last night’s dinner.  I used Rudi’s Organic brand whole grain wraps.  Inside are romaine leaves, fresh roma tomatoes, barbeque black beans with onions and tofu.  I used a recipe from Robin Roberston‘s Vegan On The Cheap cookbook.  Above the wraps is a little silicone square of Go Raw brand coconut cookies.

This dinner is one I double the recipe for to save time, and the leftovers taste better the next day.  I included a clementine orange in the top left compartment and in the top right of her Easy Lunchboxes container are honeydew melon pieces.

For her snack today, Miss G has a Happy Tiffin stainless bento box with cashews at the bottom, a butterfly cup with dried cherries and underneath the cup are dried apricots.

For my almost 3 year old’s lunch, I made an open faced heart sandwich on Rudi’s Organic whole wheat bread with Justin’s almond butter spread and strawberry heart halves on top.  Above that in the silicone cup is a peeled clementine with a leaf pick.  In the top left of her Easy Lunchboxes container are Go Raw brand Super Cookies made with all organic coconut, sprouted sesame seeds and dates for her gluten free, nut free snack.  And in the top right heart silicone cup are cantaloupe hearts.  Both girls have ice waters with their lunches.

Gift box bento lunch by bentorifficEvery day with my kids is a gift.  So I decided to put a small gift in Miss G’s lunch today.  She has an almond butter and jam sandwich shaped like a Christmas gift on Rudi’s Organic Whole Grain bread.  I put a Stretch Island fruit leather bow on top.  Above that are breaded soy nuggets in a star silicone cup.  Wedged in between is a Hail Merry Vanilla Macaroon for a treat.  Pineapple chunks and a peeled clementine are packed in next to her lunch.  In the top left are organic blueberries with a peppermint swirl food pick and Christmassy cous cous in the top right with red peppers mixed in packed in her Easy Lunchboxes container

I packed this fruit and grain snack box to go with my husband’s lunch. In the top compartments are festive colored cous cous and dried cranberries.  In the bottom of his Easy LunchBoxes are raspberries, mixed grain and walnut salad, a local organic Florida tangerine and a mini apple.

Elves and trees by bentoriffic

My 4 year old has elves watching her for lunch.  These look more like Keebler elves than Christmas elves to me, but she doesn’t know.  They are sitting on a crust of their Rudi’s Whole Grain bread.  At the top left are small carrot Christmas tree sandwiches filled with Justin’s almond butter and in the top right compartment are watermelon trees cut with a tree shaped pastry plunger that I found in a set at Target and packed in her Easy Lunchboxes container.

Miss G’s snack today was a container of Sabra hummus with dried sour cherries in the bottom, Newman’s Own pretzel sticks and cashews in the bottom.  In the top tier are dried apricots stuffed with carrot trees and surrounded by raisins.  On the right side are cantaloupe trees.

I admit there are days when I really miss the smell of dried leaves and the beautiful fall colors.  For my 4 year old daughter’s lunch, I tried to make a little autumn in her Easy LunchBoxes container.

I love finding new ways to reuse existing tools.  My readers have probably noticed my slight obsession with the small cookie cutter presses.  I loved the patterns they leave in the sandwiches.  This leaf cutter was part of a set for cutting fancy pie crusts.  I use them year-round for cutting fruit, vegetables and mini sandwiches.  The leaves are made from Rudi’s organic whole grain bread and filled with Trader Joe’s pumpkin butter.  The tree trunk is two pretzel rods.  Green grapes are the grass on a pick.  The top left is filled with organic rapsberries with an oak leaf & acorn pick.  In the top right there are 2 Crimson Gold tiny apples and a peeled clementine with a scarecrow pick.

Miss G’s snack is a Happy Tiffin brand stainless bento filled with cashews and dried edamame in the bottom container.  At the top are dried apricots, grape tomatoes and a peeled clementine.

For my 2 year old daughter, I packed a LunchBots Quad.  From the top left, she has long grain brown rice mixed with vegetables and black beluga lentils.  Green grapes and raspberries are in yellow silicone ovals at the top right.  In the bottom right compartment are Rudi’s organic whole grain bread cut into mini ice cream cones with a small cookie cutter plunger and filled with Trader Joe’s pumpkin butter and in the bottom left compartment is a peeled clementine and a small silicone container of marcona almonds.  Both girls have ice water with their lunches.

Things I used to make this lunch:

Last week one of my friends posted a photo of kiwi berries.  I had never seen or heard of them so it was a must find for me!  We love kiwi, and I was hoping the flavor was similar.  I was lucky enough to find them at a stand at the local farmer’s market.  They only had a few, but I’ll be back for more after trying them!

Here’s what they look like inside.  They are the size of grapes and sweet like kiwi without the fuzzy exterior.  Just pop them in like grapes and eat.  They have a very short season so if you’re lucky enough to find them, buy them and enjoy!

Both girls had the same wraps today for lunch.  From the top left are raspberries and 3 kiwi berries on top.  Inbetween the 2 cups are mini carrots and at the top right is a cup of lemon orzo.  In the bottom container are red seedless grapes and the veggie wrap pinwheels.  They are Rudi’s brand whole grain spelt tortillas.  I used a homemade sunflower seed spread and added julienned carrots and steamed edamame.

Below are Miss G’s snacks for school.  The top are watermelon flowers and the bottom is a cup of sprouted pumpkin seeds and dried cranberries mixed and grape tomatoes.
