My favorite pasta place in town, Peperonata Pasta in Sarasota, FL has started making gluten free, egg free, soy based pasta, and we love the fun shapes!  I buy it at the Saturday Farmer’s Market fresh.  These creste shapes are made to look like a rooster’s comb, and my kids love them!

Bentoriffic G pasta bentoI cooked the pasta and then stirred in some seasoned black beans, steamed broccoli and topped with black olives.  Included are honeydew melon and cantaloupe balls and a silicone cup of red grape tomatoes in my 4 year old’s Easy LunchBoxes container.

Bentoriffic fruity snack bentoA simple fruity snack box went off with Miss G today too.  In her LunchBots Uno, she has watermelon, strawberries, pineapple and kiwi slices.

I ordered a new Planetbox lunchbox for Miss G.  She is over the moon about her new box and owl carrying bag, and she’s anxious to pack her lunch in it again all by herself.  Today’s lunches are vegan, gluten free and soy free (except the pretzels which contain wheat).

I packed the first lunch for her in it.  Clockwise from the top are slices of blood orange, Go Raw Pizza flax snacks, cashews, dried aprictos and dried cranberries.  In the round stainless container is gluten free, vegan pesto macaroni in it with black olives and heirloom tomato slices. The bottom left compartment has sliced kiwi and in the middle is a coconut covered date and raisin “snow ball”.

For her preschool snack today, Miss G has two small bento boxes.  The top contains mini cucumbers from a local farm, and Trader Joe’s brand marcona almonds with rosemary.  The bottom container has a Wholly Guacamole 100 calorie snack pack of guac with peace pretzel chips for dipping.  At the bottom are dried mango slices.

For Miss A’s toddler lunch, she has a LunchBots Quad stainless container.  From the top left are dried cherries, rosemary roasted marcona almonds, kiwi and watermelon slices, quinoa topped with black beans, peas, carrots and shallots, and in the bottom left are carambola (star fruit) and sugar snap peas.

Above is my husband’s lunch of vegan scrambled eggs, hashbrowned potatoes at the top left and pineapple chunks packed in his Easy LunchBoxes container.

It’s chilly here even for Florida (in the 40s) so breakfast is what’s for lunch!  One of the things I was missing as a vegan was eggs.  Not the gross, slimy raw part, but just the texture.  So now I’ve found it.   It’s vegan scrambled eggs!  Here’s how I make them:

I use 1 package of extra firm tofu drained and crumbled.  I cut the small pieces for this one, and it didn’t absorb the flavors as well as crumbling.  I add a bit of water so it doesn’t stick while warming.  You could also add a bit of oil or margarine.  I saute the tofu over medium heat with 1 small onion, chopped and a half of a bell pepper (any color) diced.  Cook for 5 minutes until onions are cooked.  Then I add:

1 tsp garlic powder
1 tsp onion powder
1 tbsp soy sauce
2 tbsp nutritional yeast
1/2 tsp turmeric which give it it’s egg-like color

Options:

black olives, halved grape tomatoes, 2 italian sausages diced into 1/2 inch pieces, I used the Field Grain Meat Company’s sausages.

Mix ingredients well and cook for an additional 5-10 minutes over medium heat.  Serve plain or inside warmed tortillas with dairy free sour cream and salsa.

Miss G’s (4 years old) is above.  She has the same tofu scramble with lots of black olives.  At the top left she has pineapple pieces and 2 small pancakes sliced in half.  Not shown is her Mini Dippers container of maple syrup for the pancakes packed in her Easy LunchBoxes container.

Miss G’s snack for today is packed in her LunchBots Duo stainless container.  One the left side is a leaf shaped sweet potato muffin with 2 Crimson Gold apples.  On the right is a peeled clementine orange and sliced kiwi.

Things I used to make this lunch:

Happy Monday, everyone!  Hope you all had a safe Halloween.  I packed some post-Halloween pasta today for the girls’ lunches.  I cooked some farfalle (butterfly) pasta and added orange grape tomatoes and black olives for the fall/Halloween look.  In Miss G’s Goodbyn Bynto, I added a small blue container of vegan parmesan for sprinkling over the top.  Next to that in the bottom compartment is a peeled clementine orange and coconut date balls for a treat.  Her ice water fits in the middle compartment.

In her Happy Tiffin stainless bento is half of a d’Anjou pear surrounded by red grapes.  In the round container is cinnamon applesauce for her snack.

Miss A usually has a smaller version of what everyone else is having.  In her LunchBots Duo is a peeled clementine at the top left surrounded by red grapes.  Below that is a coconut date ball surrounded by dried apricots.  On the right side is her farfalle pasta with halved grape tomatoes and black olives.  Hers is already sprinkled with a bit of vegan parmesan to minimize mess.

For her small snack today, she has cashews and a mini box of California raisins.

Things I used to make this lunch:

It’s almost trick or treat time.  I wish I could say that I’m ready, but I’m not.   My kids’ costumes were ordered and still haven’t arrived.  I am throwing a party in my front yard this year with my neighbor so we can feed the kids healthy food, play games and wear them out a bit before trick or treating.  We did the same last year, and they were pretty full from healthy food before all the candy so it was a success!  We made almond butter and jam sandwiches, fresh fruit, vegetable sticks with dip, hummus and pretzels and ice water. Any fun ideas that you all are planning?  I’d love to hear your ideas!

My 2 year old has a jack o lantern sandwich made from the heel of the bread loaf and filled with pumpkin butter spread.  She also has black olives, cantaloupe pumpkins, dried apricot pumpkins and at the top left is a nut and seed mixture with dried cranberries complete with zombie hand and tombstone.  At the top right is a peeled clementine packed in her Easy LunchBoxes container.

Little Miss G (4) has a similar lunch today.  She has the same jack-o-lantern sandwich, a jack-o-lantern clementine, pumpkin shaped dried apricots and trail mix of nuts and berries in her Easy Lunchboxes Mini dipper container.  At the top left is a seckel pear and at the top right are pumpkin shaped cantaloupe pieces packed in her Easy LunchBoxes container.

And for a snack I packed a Happy Tiffin stainless bento with raspberries, a clementine ghost and the round container full of cashews.

Today was a leftover day.  Come on!  I can’t pull out spectacular on a daily basis 😉  I had some Rudi’s brand spelt tortillas and rice with black eyed peas just calling my name from the fridge.  So I rolled them up and made them lunch.

Miss G is reading now (at 4.5) which means I can’t spell out the things I don’t want her to hear any more.  BUT it does mean I can start small with lunchbox notes.  I wrote on her clementine today in marker and made a weird looking heart out of it to tell her “I Love You!”.  The Goodbyn bynto box fits the water bottle in the middle, and at the bottom are chunks of watermelon and pineapple.

Miss G’s snack is a Happy Tiffin with a half an apple surrounded by pieces of plum.  I added a leaf sticker for fun.  The round container has apricot mango soy yogurt in it.

For her afternoon snack she has a pickle with black and kalamata olives on top and the top container is full of mini carrots.

Miss A has a simple lunch today.  From the top left are a pink flower of plain hummus, organic corn chips, strawberry soy yogurt and pineapple and watermelon pieces packed in her LunchBots container.  Not shown are organic gala apples for little Miss A’s class snack.

When my kitchen’s full of leftovers, I always try to turn it into lunch for the next day. Last night’s was enough to make 3 lunches!

At the top left Miss G has seasoned soy crumbles with black olive eyes, lashes and a grape tomato mouth. Above are mini corn chips for dipping.  At the top right are grape tomatoes and black olives.  In the middle of her Goodbyn bynto is her leakproof water bottle.  In the bottom compartment are plums and mango pieces.

And snacktime for Miss G has d’anjou pears and a happy apple in her Happy Tiffin stainless bento.  The round container has So Delicious brand raspberry coconut milk yogurt in it.

Miss 2 year old is still picking at her lunches like most 2 year olds.  I have been limiting her breads since I find that’s all she eats.  She has a mini version of the leftovers in her LunchBots Quad.

My husband has the adult version.  He has Lightlife brand soy chicken strips with taco seasoning on a bed of romaine and red, leafy kale topped with black olives and grape tomatoes.  At the top left are the same mini corn chips and at the top right are organic figs packed in his Easy LunchBoxes container.
