Thank goodness I put it on my calendar.  I check my schedule last night, and Miss G’s school is celebrating International Peace Day today.  At first, I had a good laugh over what’s NOT appropriate for a kid’s lunch box that reminds me of peace and the 60s.  Cheech & Chong movies, protests, stinky hippies, a lot of grass (and I don’t mean to walk on) and some really good music I will pass on to my kids some day.  But for now, I decided on the basic peace sign lunch.

At the top left are barley and brown rice and black beans on top.  At the top right are blackberries, raspberries and a strawberry.  The peace sign is cantaloupe and piel de sapo is the greenish white melon.  It’s also called a Santa Claus melon and tastes a lot like honeydew.  I used a cookie cutter to cut the melon.  The PEACE letters are Stretch Island fruit leather.  The heart and Have A Nice Day sandwiches are Rudi’s Whole Grain bread with almond butter and sliced berries with fruit leather faces packed in her Easy LunchBoxes container.

In all seriousness, I think it’s great that they’re teaching 4 year olds about respecting others from all walks of life and all nations.  Being kind to others always goes a long way in accepting even when we don’t understand.

Miss G’s snack today is a sliced nectarine surrounded by more melon pieces.  In the round container is So Delicious brand coconut milk strawberry yogurt packed in her Happy Tiffin stainless container.

Things I Used To Make This Lunch:

As long as I get creative with it, my kids will eat just about anything.  I took last night’s teriyaki marinaded gardein brand (faux) chicken over brown rice with quinoa.  I used a bear shaped rice mold to reshape the rice/quinoa mix.  The bear cup is filled with small pieces of the soy “chicken”.  Behind the bears at the top are 2 small bear sandwiches.  The water bottle in the middle compartment is great for keeping things compact in the lunch box, and it doesn’t leak.  I do handwash this whole box and the bottle.  At the bottom are watermelon pieces in the middle, strawberries on the side and a skewer of blueberries packed in her Raspberry Goodbyn brand bynto lunchbox.

For her snack today Miss G has mini organic carrots and organic green beans with honey mustard to dip in the bear container.

Miss A (2) is still allowed to take character themed items to school.  I found this small, 2-tiered bento box on eBay this summer with Stitch on it from Disney’s Lilo & Stitch.  She LOVES it.  We’ll be using it quite a bit this school year as it’s the perfect size for her. 

On the left are small almond butter sandwiches shaped like chicks and dried cranberries below.  On the right are organic blueberries with a watermelon chick, strawberries and watermelon pieces.  She also has a snack of nectarine and pineapple pieces not shown.

Who has time to make these lunches?  If I had a nickel for every time someone said that to me, I’d have a whole lot more in savings.  The answer is anyone.  It doesn’t take as much time as you think.  Grab a mini cutter and try it!   Today I’m posting some not as pretty lunches.  They took me about 5 minutes each to make.  Still cute, still healthy and barely any time at all.

One of my favorite lunch tools is the Lunch Punch cutter sets.  They are super quick, cute and simple to make lunches.  At the top left are pluot slices and sugar snap peas.  At the top right are raspberries and a watermelon whale packed in a Lunchbots Uno.

Miss Four Year old had mini leaf and flower sandwiches are almond butter and jam with hummus and black bean crackers for dipping at the top.  Her Goodbyn Bynto lunchbox has a water bottle that fits in the middle and below that I packed sugar snap peas and watermelon pieces.

My husband had leftovers from dinner that we will definitely be making again!  I made my own version of this recipes for Six Sisters’ Stuff Spicy Rice and Bean Wraps that I found on Pinterest.  I made it vegan, and I keep out the spice at least for the ones I made for the little ones.  We added a little salsa on the adult versions at our house.

I used whole grain tortillas for the wrap.  In a bowl I mixed  1 cup of brown rice and quinoa mixed, 1 can of pinto beans (what I had in the pantry), and 1 tsp cumin.  I smeared a small bit of Tofutti brand vegan sour cream on the tortilla, then I loaded up with rice, quinoa and pinto bean mixture and added some julienned carrots and cucumbers on top.  I rolled them tightly, cut & served with sides of green and red salsa for the adults.   Dinner and leftovers for lunch too!  At the bottom I packed some sliced kiwi and cantaloupe in a LunchBots Duo.

Today I’m starting with my husband’s salad since it’s the prettiest.  Since school has been out for a week for my kids, I’m enjoying a bit of lazy lunch time.

The salad is baby romaine & mixed greens on the bottom.  The deep pink stars are watermelon radishes, the almost white stars are zucchini, and also included are yellow squash slices and carrot slices.  At the top right are seedless green grapes with dried apricot stars on top.  At the top left are our taco leftovers of Lifelight Smart Grounds (faux beef) mixed with black beluga lentils and heirloom tomatoes sliced on top packed in his Easy Lunch Box.

So we packed a lunch for the local aquarium today.  We love it at Mote Marine Laboratory because we get to watch them feed sharks, see the graceful manatees eat, witness first hand how they rehabilitate the local sea turtles, dolphins and other sea life.

I packed a dolphin for Miss G with lots of snacking fruit & veggies.  She has green grapes, at the top left are grape tomatoes with a dolphin pick.  At the top right are raspberries, blueberries, mangoes, prunes and dried apricots on picks.

Miss A had leftover pieces of  Field Roast from dinner last night made by The Grain Meat Company.  It’s a vegan roast made entirely from wheat, grains and vegetables and tastes a whole lot like a normal roast.  It will be on my shopping list for the holidays for sure!  Yum!

And she got my very messy attempt at using a template for rice.  I tried sprinkling cinnamon on her brown rice over a fish template.  It was supposed to look like a fish, but it’s barely recognizable.  On the top of her LunchBots are swords of grapes, blueberries and raspberries.

Not shown was my sandwich & fruit which were also eaten (mostly) by my kids!

Happy Hump Day!  In addition to the letter X this week, the girls are also learning about flowers in school this week.

Miss G has 2 flower sandwiches on Ezekiel Low Sodium bread.  Above the flowers in the flower cup she has raspberries surrounding a cantaloupe flower.  At the top right are blueberries underneath a pear flower with a blueberry in the middle.  At the bottom right are sugar snap peas with a cup of brown and wild rice in a flower cup on top of them and a flower cup of cashews.

Miss A has 2 matryoshka dolls, also known as Russian nesting dolls, for lunch.  They are also on Ezekiel bread with fruit leather hair and faces. Underneath the dolls are sugar snap peas.  At the bottom left she has watermelon and cantaloupe flowers.  At the top left she has a cup of pineapples underneath blueberry stuffed raspberries.  I saw some of my other blogger friends doing this, and I thought it was so cute and clever!

My husband has a spinach salad today topped with a cucumber X and heirloom tomato slices.  At the top right is white bean bruschetta with tomatoes, fresh basil, garlic and red wine vinegar.  At the bottom right is a cup of mini carrots and a piece of purple cauliflower in the middle and blueberries around the cauliflower.  All 3 lunches today are packed in Easy Lunch Boxes.
