I looked at the school calendar yesterday and realized it’s rainbow week at the girls’ school.  I didn’t have anything naturally blue today so I just left it out & put food in blue cups instead rather than coloring something blue.  Boring, I know.

The coolest thing in the lunches is the bread which, admittedly, I did not make.  I have to give full credit and mad props to my baking envy of Astrid over at Lunch Fit For A Kid.  I have seen her amazing baking skills from breads to cakes and homemade rolls.  This girl can BAKE!  So I begged, and pleaded and bribed her to make me a loaf of her rainbow pan de mie.  Please click on the link here for her recipe for the Rainbow Pan de Mie.  She “veganized” it for me by using soy milk in place of the cow’s milk whey.  It was even more beautiful than I’d seen in her blogs, and my kids went nuts over it.  I even made vegan Easter french toast with it this past Sunday, and it was yummy!  I am not a great baker, and so I was extra grateful to have Astrid make something so special for my family.  Thanks again!

Here’s how our loaf turned out:

And this is Miss G’s lunch today.  From the bottom left up, she has strawberries, a mandarin orange, pineapple chunks and yellow pear tomatoes from our garden.  At the top left in the blue cup are sauteed broccoli & cauliflower, green pear tomatoes and kohlrabi slices in the middle for the purple.  I’m betting they won’t get eaten, but the rule in our house is that she has to at least TRY it.  At top right are three prunes surrounding some organic Lemon Snap spelt cookies that I found at Whole Foods.  And at the bottom right is her tulip sandwich on the rainbow bread filled with almond butter and jam all packed in her Easy Lunch Box.

Little A had her own version of a rainbow lunch today. This week is also the letter “U” so her tiny sandwich is a U.  From the top left clockwise, she has strawberries, half of a mandarin orange, at top right are leftover pieces of a Quorn brand meatless & soy free Vegan burger, her rainbow “U” almond butter & jam sandwich, dried cherries, kohlrabi, and pineapple and honeydew melon in the middle packed in her LunchBots Duo.

Lastly is my husband’s salad for lunch.  He is in on the rainbow theme too.  He has a spinach and baby greens salad.  On top are red bell peppers, orange heirloom tomatoes, yellow zucchini, spinach, raddichio, and kohlrabi on top packed in his LunchBots Uno.  Everyone in our family totes CamelBak bottles with filtered ice water throughout the day.

Miss G wanted to learn about what state we live in so she got a new 50 states map puzzle for her birthday.  Since it’s still “S” week at school, I decided to make her a Sarasota, Florida lunch.  I rolled out whole grain bread with a rolling pin & hand cut the Florida shapes.  Inside is almond butter, agave nectar and sliced strawberries.  I decided to just make a small fruit leather star to show her “You are here.” in Sarasota.  For fun I added dried cherries in an orange blossom cup for the state flower some watermelon chunks in a pretty cup and on top are flamingo picks of edamame and carrot suns on top.  She’s also having a dapple dandy plum half at the bottom right with a strawberry heart on top.

Little sister got a space themed lunch today with a space shuttle and an S sandwich with the same whole grain bread, almond butter, agave nectar and sliced strawberries. The sandwich is surrounded by watermelon shuttles, a watermelon star and dried apricot crescent moon and a star.  In the pink sheep are dried cherries topped with a watermelon sun & stars and on the bottom left are watermelon chunks topped with a space shuttle strawberry and shuttle picks with edamame on them.  Both girls had ice water in their CamelBak kids bottles.

The girls are off to play this morning so mommy can get a few things accomplished this morning.  I decided last minute to have them stay through lunch.  Miss G gets a flower LunchPunch cut sandwich with almond butter & jam.  She has red grapefuit in the purple cup and a peeled & sliced kiwi in the pink cup.  The flower cutout has agave nectar in it and inside the heart container are Craisins all packed in her Easy Lunch Box.

Little Miss A has a smaller version.  Her is an almond butter & jam in whole grain bread made from the new LunchPunch set.  She got a little ice cream cone, agave nectar to stick sprinkles and fruit leather for the cone details which are SURE to fall off from all the shaking she does.  She insists on wearing her “pack pack” and RUNS with it on so I’m sure it doesn’t look cute by the time she eats hers. On the right are dried apricots, sliced strawberries and Craisins in the heart container packed in her LunchBots stainess Duo.  Both girls have ice water in kids CamelBak bottles with their lunch.

I had all the right intentions.  Last week was “P” week at the kids’ school.  I thought I’d be proactive and ask Miss G what she wanted for her “Q” lunch.  The only thing she could come up with was quail so it was decided.  All good if NEXT week wasn’t “Q” week, and this week is a review.  So much for planning!

So a quail it is on whole grain flat bread with a carrot leg,  almond butter & jam inside in a stainless LunchBots container.  The 3 baby quails following behind are watermelon chunks.  The pink bunny container has mini carrots, the orange sauce container has dip for the carrots and the pink muffin cup has raspberries, blueberries and a big strawberry.

Miss A has a heart shaped  flatbread sandwich with almond butter and jam. Underneath it in the squirrel cup are cashews.  On the left side are watermelon flowers and heart shaped strawberries below.  Both girls have ice water in their kids CamelBak water bottles.
