I’m outta here!  It was a last minute decision, but I think it will prove to be a great one.  I was invited last minute to the Niche Mommy conference in New Orleans this week.  I’ve never been to New Orleans so I’m really looking forward to checking the French Quarter out.  My high school symbol was the fleur de lis (goes with my French loving theme well) so I decided to do a Fleur De Lis salad for my husband.  After all, he has to take care of the kids while I learn all kinds of new blogging techniques, social media tricks, hopefully improve my photographic skills and maybe have some good old fashioned girl fun while I’m away.  The salad is baby spinach and lettuce from the local organic farm.  On top is a heart of tempeh (fermented soybeans) which reminds me of a heavy barley.  Sliced mushrooms and fleur de lis cucumbers are also on the salad.  At the top left is quinoa salad with scallions, italian parsley, red and green peppers.  And at the top right are peach sections packed in his Easy LunchBox container.  Not shown is his ginger salad dressing.

I packed myself an Easy LunchBox for the trip today.  From the top left are dried mango pieces, pretzels and crackers for dipping.  In the small blue silicone cup is Eggless Salad by one of my favorite vegan chefs, Lindsay Nixon, better known as the Happy Herbivore.  Lindsay’s recipes are simple enough to get dinner on the table in 30 minutes, and yummy enough that they will become weekly staples in your house.  If you’re looking for meatless and/or dairy free recipes, I highly recommend purchasing her cookbooks.  I have 2 and a third pre-ordered from Amazon I like them so much!  Organic strawberry hearts mini almond butter sammies and Sabra hummus make up the rest of my lunch.

I have a lot going on this week.  It’s the first week my kids are off school, it is my 1 year bloggiversary on June 2nd, and my sister is having her 1st baby today!   She’s not here yet, but I know she’s a lucky and beautiful girl already.  Welcome to the world, precious girl!

Since we’re my 1 year anniversary as a blog, I want to thank my friends and fans for all their support.  I love you toast with fresh fruit for breakfast anyone?  The small heart flowers are cantaloupe and watermelon.   The heart in the middle of the toast is fruit leather.  I used both the FunBites Luv It and Cube It cutters for the meal below.

And a baby carriage sandwich today with a baby panda to celebrate my sister and her husband’s new arrival today!  A sandwich made from both the FunBites Luv It and Cube It cutters.  At the top left are pineapple and cantaloupe cubes and at the top right are pear cubes both cut with the Cube It FunBites cutter.  The baby carriage sandwich is an almond butter and jam on whole grain bread cut from the FunBites Luv It cutter .  The small hearts at the top are dried apricots.  The baby lunch is also packed in an Easy Lunch Box.

My husband has to travel today so I suggested that I pack him a lunch.  Airport food is dreadful in general, but when I flew recently I realized how tough it is to find ANYTHING vegitarian, vegan or just plain healthy.  I packed my own sandwiches, but it was a long day of traveling.  We are still doing our plant based diet so the goal is to eat as little processed food as possible.  Since we’re still a bit new to the diet it takes some planning ahead.

He may want to kill me for a cutesy sandwich, but I couldn’t resist.  He has the airplane LunchPunch cut out of Rudi’s Whole Grain bread which is our favorite brand for the past few months.  The sandwich is surrounded by organic mini carrots and fresh blueberries on the top part.  At the top left are locally grown cucumber slices and at the top right are grapes and a strawberry heart packed in his Easy Lunch Box.

Please excuse the poor photos for his traveling lunch.  I had to take them late last night.

Since I know he will be traveling most of the day,  I also packed a second smaller bento box.  The bottom part has a single serve Sabra brand hummus with whole grain crackers and a heart container with dried cherries in it.  The top portion is packed with halved strawberries as his afternoon snack along with a couple of Larabars.

Little Miss 2 year old is having an apple sandwich on Rudi’s Whole Grain bread with a surprise “worm” coming out of it.  It’s actually an Annie’s Organic Fruit Bunny, but I drew a small face on one end with a food marker.  Looks like a worm to me!  She’s also having a small apple container of dried cherries.   On the left side of her LunchBots Duo is a flower cup of halved grapes and a strawberry heart on top.  Above that are blueberries.

Miss G is having a dog house sandwich with a silicone dog cup of blueberries, honeydew melon grass and a small orange cup of dried cherries.  At the top right are grapes surrounding a carrot stick.  At the top left is a cup of homegrown heirloom tomatoes and a green dog pick packed in her Easy Lunch Box.
