After I made the recent Batman bento a couple of weeks ago, I got a thoughtful message from my friend Kelly who liked the lunch. She happened to mention that her husband, Loren Lester, was the voice of “Robin” in Batman: The Animated Series. She thought it would be fun for me to create a Robin bento & dedicate it to him, and I’m always up for a new challenge. Please visit his website at www.lorenlester.com. He has not only done some amazing voice acting but also film, stage and TV over the past 35 years. He and his lovely wife are certainly not lacking in talent!

And even though you can’t eat it, I hope you enjoy the lunch I made for you, Loren!

Robin’s made from Rudi’s Oat & Nut bread and hand cut. His hair, mask and part of his cape are made from Stretch Island brand grape fruit leather. His eye whites are Vegan brand cheese. His torso is a Pink Lady organic apple with yellow squash stripes and R on his chest. His green sleeves are zucchini. In the top left are cherry tomatoes and in the compartment at top right are pieces of zucchini and yellow squash packed in an Easy Lunch Boxes container designed by Loren’s amazingly talented wife, Kelly!

Today it’s still raining so we’re doing leftovers for lunch.  My husband is having a black bean & spinach enchilada leftover from dinner.  Don’t let the cheese & sour cream fool you.  It’s totally vegan.  Tofutti brand sour cream and Daiya brand cheddar “cheese” shreds are easily substituted and taste just like the real thing.  I incuded some chips and guacamole (not shown) for him to eat with the enchilada.  At the top left are carrot and celery pieces and the top right compartment are nectarine slices packed in his Easy Lunch Box.

The kids got a smaller version of this in quesadilla form today.  I mixed some mild salsa in with black beans, wilted baby kale & spinach & mixed it in too.  Then I stirred in some Daiya brand cheddar “cheese” shreds and small, diced tomatoes.  I put them on a whole grain tortilla in a skillet and warmed them, folded the tortilla over & cut into slices.  The heart cup is Tofutti brand sour cream mixed with lime juice for dipping.  At the top are organic nectarine slices.

We’ve been hunkered down all weekend and part of this week just trying to stay safe and dry form Tropical Storm Debby.    We’ve had torrential downpours, flooding and 60 MPH gusts of wind.  The girls wanted to watch Despicable Me while snuggling so I made a lunch to match.

The sandwich is Gru the so called villain of the movie.  He’s made of Rudi’s Nut & Oat bread.  His nose is the bread crust, his teeth are vegan cheese, his eyes are Florida grown lychee halves and the pupils and eyebrows are made from plums.  The stars and rocket are homemade biscuits from the weekend.  I made the minions from pineapple chunks and fruit leather for the goggles and eyes.

Our storm lunch is a lightning bolt made from the same Rudi’s bread.  Above it are more of our homemade crackers shaped like clouds and an umbrella.  In the yellow flower cup are plum sections with an umbrella pick.  Below in the oval cup are red seedless grapes.

And the sides for my husband today are a salad made from baby kale, spinach and arugula.  At the top right is edamame succotash with edamame, corn, tomatoes, white wine, garlic, parsley, basil, jalapeno peppers,  and pepper.  At the top left are lychee fruit unpeeled all packed in his Easy Lunch Box.

The girls were off to play while I went to the dentist so they got to do lunch on the go.  I made some little pigs for Miss A.  Her sandwich is on Rudi’s Whole Grain bread and a raisin eye.  Above in the white pig are dried cranberries and the pink pig container has organic raspberries.  At the top left are watermelon strips with a pig pick and at the top right are red seedless grapes with a little pig baran peeking out.

Miss G chose the elephant Lunch Punch for her sandwich.  Both mom & baby have raisin eyes on their Rudi’s whole grain bread.  At the top left are red seedless grapes and at top right are elephant shaped watermelon pieces.  Both girls’ lunches are packed in Easy Lunch Boxes.

I also packed a salad for my husband to go with his lunch.  Baby greens of swiss chard, spinach and arugula are topped with a half of an heirloom tomato surrounded by grape tomatoes and cucumbers.  At top left are pineapple chunks and red seedless grapes at the top right packed in his Easy Lunch Box.

These were fun afternoon snacks for my kids.  We live on the Gulf Coast of Florida.  I’m the big water fanatic in the family so we spend as much time as possible out walking the beach and playing outside.  We found a crab last week while walking the beach so I included him.  From the top left is a fruity drink made of watermelon and a cantaloupe strip on top with an orange slice garnish.  To the right is a beachy scene.  All the sand is cous cous with food coloring.  The crab is made of grape tomatoes, a tiny piece of uncooked pasta to attach his pinchers and 2 candy eyes.  The coconut palm is made from a pretzel stick trunk, kiwi palm fronds and dates rolled up for coconuts.  The flip flop at the bottom right is a pineapple chunk with Stretch Island brand fruit leather straps.

I also love to standup paddleboard which little Miss G did with me on Mother’s Day.  She was a bit nervous, but she ended up having a great time.  I did a scene with her half in the water hanging onto a surfboard (paddleboard) in the water which was cous cous dyed with food coloring.  The sun is a pineapple wedge.  The face and body of the girl are made from Stretch Island brand fruit leather and Vegan brand cheese.  Miss G knows that sharks live in salty water so I gave her coconut milk yogurt a water color too, and I put the fish(fruit leather) close to her & the shark far away.  At the top left is hummus with sea grass (snap peas) and an anchor.  Not shown were the quinoa chips for dipping.  Both snacks were packed in their Easy Lunch Boxes.

We were invited to a small pool get together late this afternoon.  I knew the girls would be hungry.  Since we’re trying to keep to our plant-based diet, it’s easier sometimes to travel with food.   I packed both of them snacky type dinners in their Easy Lunch Boxes to go.

Miss A has Tofurkey deli sliced flower and Vegan brand cheese flowers to snack on.  The snake picks on either side are blueberries, and below is a sliced strawberry.   At the top left is hummus and the top right are honeydew melon flowers.  Not shown are whole grain pretzels for dipping in the hummus.

Miss G’s snack box is similar.  She also has Tofurkey deli slices and Vegan brand cheese in tree shaped bites. Below the small bites are black plum slices.  At the top left is hummus and the top right are honeydew melon trees packed in her Easy Lunch Box.

I loved some of the suggestions I got from the giveaway comments so I’m putting many of them into action in the upcoming weeks.  One of the comments from Mandie was that she wanted to see superhero lunches.   My kids are so young the have few superheros that they actually know yet, but I decided that they’d probably love the lunches anyway.

Miss A gets the Batman lunch.   She has an almond butter and jam sandwich on Rudi’s Whole Grain bread.  Batman’s mask and bat are made from Stretch Island brand grape fruit leather, and his eyes are vegan cheese. The bat picks surrounding the sandwich are sliced green grapes and blueberries.  She has honeydew melon bats. and dried cranberries and raspberries at the top.

Miss G has the Spiderman lunch today.  I used a spiderweb cookie cutter and made the web strings from Stretch Island Fruit leather.  Spidey’s eyes are made from vegan cheese.  The spider picks on the sides are tiny organic grape tomatoes.  She also has Spidey eye shaped honeydew melon pieces are at the top right with the spider and at the left are raspberries with a vegan cheese star on top.  Both lunches are packed in Easy Lunch Boxes.
