It was Miss A’s birthday this week.  She turned 3.   I think every mother sits back and asks where the time went.  It certainly doesn’t feel like 3 years ago!  In any case, I made her a special birthday lunch, and her Easy LunchBoxes container came back empty which is always a sign of success to me.

Bentoriffic- Three Years Old bento

I used the LunchPunch birthday cake cutter on Rudi’s Whole Wheat bread.  Inside is Justin’s Almond butter with a bit of agave nectar.  I cut a 3 out of  Stretch Island fruit leather and used a tiny heart cutter for the flames of the candles.  On either side of the sandwich are heart picks of organic blueberries.  In the top left compartment are 3 pineapple chunks and three candle cupcake picks and in the top right are 3 number 3 pieces of watermelon and a date and raisin ball rolled in coconut.

Stitch present

Her favorite present?  A Stitch action figure which I found on eBay.  He speaks alien, makes laser gun noises and comes with green alien drool.  I know, I’m not winning mother of the year in some people’s eyes, but she LOVES her Lilo and Stitch Disney movies.

Miss G wanted to make her own lunch today so I obliged.  She had a cupcake shaped sandwich with the same LunchPunch set.  She filled it with chocolate almond butter and cut a fruit leather cherry for the top.  She also has organic blueberries and ice cream cone shaped watermelon pieces in her Easy Lunchboxes container.

Bentoriffic- BBQ beans and veggies bento

My husband is having last night’s leftovers of barbeque black eyed peas, beans and vegetables.  It’s as simple as it sounds. Cook black eyed pease and your favorite beans (I used pintos) or open the can & dump into a skillet.  In a separate skillet I cooked 2 carrots chopped, 1 shallot finely chopped, 1 cup of peas and 2 turnips and sauteed them in a separate skillet until cooked.  I used about a 1/2 cup of barbeque sauce and coated the beans while heating them.  When the vegetables were done cooking, I merged the two and coated it all with the barbeque sauce.  Dinner is served!  In the top left are pineapple pieces and in the right compartment are watermelon pieces in his Easy Lunchboxes container.

I have a lot going on this week.  It’s the first week my kids are off school, it is my 1 year bloggiversary on June 2nd, and my sister is having her 1st baby today!   She’s not here yet, but I know she’s a lucky and beautiful girl already.  Welcome to the world, precious girl!

Since we’re my 1 year anniversary as a blog, I want to thank my friends and fans for all their support.  I love you toast with fresh fruit for breakfast anyone?  The small heart flowers are cantaloupe and watermelon.   The heart in the middle of the toast is fruit leather.  I used both the FunBites Luv It and Cube It cutters for the meal below.

And a baby carriage sandwich today with a baby panda to celebrate my sister and her husband’s new arrival today!  A sandwich made from both the FunBites Luv It and Cube It cutters.  At the top left are pineapple and cantaloupe cubes and at the top right are pear cubes both cut with the Cube It FunBites cutter.  The baby carriage sandwich is an almond butter and jam on whole grain bread cut from the FunBites Luv It cutter .  The small hearts at the top are dried apricots.  The baby lunch is also packed in an Easy Lunch Box.

Both girls wanted Hello Kitty lunches for school today.  This will officially be their last bento lunch of this school year since tomorrow is a water day with lunch in the the classroom.  You never know how much you appreciate all that teachers do until you have your kids at home for a week straight with no curriculum planned!  Thank you to each and every teacher, aide and friend who touches my kids’ lives.  You are truly a gift!

Miss A has Hello Kitty face on Rudi’s whole grain bread.  The face, bow & whiskers are cut from Vegan brand cheese.  To the left are raspberries with a blueberry in the middle.  At the bottom left are watermelon pieces and at the bottom right is a giant strawberry heart with Hello Kitty picks of edamame on either side packed in her pink Sanrio brand Hello Kitty bento box.

Miss G has the same Hello Kitty face sandwich with a fruit leather face, bow & whiskers.  Above the sandwich are two Hello Kitty picks of edamame.  To the right of the sandwich is a giant strawberry heart and a Hello Kitty container above that with dried cranberries and cashews inside.  In the purple flower cup are raspberries with a Hello Kitty pick and at the top right are watermelon pieces in Hello Kitty’s face shapes.  The top piece has a bow pick and black sesame seeds for eyes and a nose.  Her lunch is packed in an Easy Lunch Box.

School’s almost over for us.  It’s hard to believe since the days drag, but the weeks fly.  This week is a continuation of Under The Sea theme.  Miss G requested a submarine.  I have to admit it would be one of the last things I ever would have come up with.  It was so creative that I agreed.

She has a Justin’s Almond Butter and jam on Rudi’s Whole Grain bread.  I used a rolling pin to flatten the bread before hand cutting the submarine.  It has fruit leather portholes.  She has a date whale with coconut flakes on top next to the boat.  At the top left are mango slices with a blowfish pick and at the top right are watermelon slices with a small sea turtle pick.

I didn’t feel like making 2 subs so Miss A got an octopus today.  Hers was cut from a biscuit cutter and then I used the biscuit cutter to cut “legs” out of the remaining bread.  His hat is a date roll with coconut flakes shaped into a hat.  The eyes are candy eyes stuck on with almond butter and so is the fruit leather mouth. At the top left is a mandarin orange with a dolphin pick, at top right are watermelon pieces with an octopus baran (food separator), and in the yellow oval are mango pieces with an octopus pick.

My husband has a salad & sides to go with his lunch today.  His salad is organic romaine lettuce,with a locally grown, sliced tomato courtesy of my generous neighbor (Thank you!), unsalted, raw walnuts, mini carrots and cauliflower.  At the top left are dried apricots and a date roll with coconut flakes and at the top right are watermelon slices.  All 3 lunches today are packed in Easy Lunch Boxes.

I must admit that the first time I got the FunBites Luv It cutter, I played with it for a few minutes.  Then my creative brain took over.  My kids didn’t need any time to decide to play.  They still think it’s a fun toy.  Luckily, it is also seriously durable and washes clean quickly.  I am not afraid to let them have the FunBites cutters to experiment.  Yes, it’s been chucked across the table, accidentally dropped and well used by my 2 and 4 year old, and both cutters still look like new.  NOT that I recommend trying it, but with toddlers anything can happen.  The best part is that once you show them, even the littlest kids can use it to help make their own snacks.  Mine LOVE creating shapes and playing with the pieces of bread, fruit, pitas or anything cut out of these fun food cutters.

FunBites Kite Lunch

For Mother’s Day, I thought it would be great to think of all the things we do.   Without mom’s a house is just a house, but with love and care it becomes the place your heart and home are.  The cantaloupe at the top left was cut with the Cube It FunBites cutter.  At the top right is guacamole in the yellow flower cup.  In the green clover cup are small, square tortilla chips I made with the Cube It FunBites cutter (see how below!)  The sandwich is Justin’s almond butter & strawberry jam on Ezekiel bread all cut with the FunBites Luv It cutter shapes.  The sun’s rays are soy cheese cut with the same cutter, and the hearts are fruit leather cut from the FunBites Luv It cutter too.

So for the homemade tortilla chips, I cut a whole grain tortilla (also pita bread or flatbread is easy for these too) with the Cube It FunBites cutter.  I placed them on a cookie sheet lined with parchment paper.  Then I lightly misted grapeseed oil (or any oil, just go easy with it) over the pieces and lightly sprinkled garlic powder over them.  I placed them in the oven on my low broiler setting and placed in the middle of the oven.  As long as you’re watching them, you can do this at 300-350 too.  They take about 5-7 minutes depending on your oven.  Again, just make sure to watch them.  Because they’re small pieces, they brown quickly.  My kids like the garlic chips with guacamole and hummus.  You can do the same thing and use cinnamon instead of the garlic powder.

I was looking at the calendar today, and I’m a bit sad that my kids only have 3 more weeks of school left after this week!  They are really going to miss their teachers and friends this summer.  Where did the time go?

I haven’t really been looking forward to X week at school.  I took the lazy way out and broke out the Halloween cutters for this one.  I decided on a skull since it was the closest thing to a skeleton without me having to cut out bones at 10pm!  At 2 and 4, the only things my girls know that begins with X are an X-ray and a xylophone.

So a cheater’s x-ray it is for both.  Miss G’s skull x-ray is on Ezekiel bread with Justin’s Almond butter and jam.  She has the tomatoes on either side which she has helped plant, water and grow.  She could eat bowls of the small tomatoes so she’s enjoying her crops. Separated by an octopous baran are cauliflower and a carrot X in between.  At the top right are blueberries with a watermelon X and below are sliced mangoes with a fruit leather X on top packed in her Easy Lunch Box.

Miss A has a smaller version with the same skull x-ray sandwich.  Hers is surrounded by mini carrots.  At the top left are mango pieces with a fruit leather X on top and to the right are 2 picks of blueberries made into an X surrounded by watermelon triangles.

If I had kept up with the paperwork that comes home from school, I would have known about kite day earlier!  Instead, Miss G’s teacher was kind enough to remind me yesterday.  I had another transportation lunch planned, but I decided to reroute.  It’s actually the perfect idea because my little girls have been very into Mary Poppins lately so I was thinking about the song, “Let’s Go Fly A Kite”.    I did a FunBites giveaway a few weeks back, and I had a kite idea that I didn’t use. The two kites at the bottom were cut using the FunBites Luv It! cutter.

At the top left are pineapple chunks cut with the FunBites Luv It cutter and topped with a heart strawberry.  To the right is Sabra hummus in an orange flower cup.  The heart in the middle is a snow pea, on the KITE picks are edamame and below are mini carrots for dipping in the hummus.  The bottom 2 kite sandwiches are made on Rudi’s Nut & Oat bread cute with the FunBites Luv It! cutter which can be found through their site or on Amazon.  Both have almond cutter & strawberry jam inside.  The kite to the left is topped with Veggy brand soy cheese, and the clouds are also made from the same cheese.  The kite strings are made from black rice vermicelli.  Miss G’s lunch is pack in an Easy Lunch Box, and she has ice water with her lunch.  In keeping with our new diet, her whole lunch is plant-based and vegan.

The girls’ school has been celebrating Dr. Seuss all week for his birthday.  He would have been 108 years old!   My fellow bloggers have been making fabulous foods all week for their kids, and now it’s time to hop!  Blog hop that is.  At the bottom of this page you’ll find a link to visit the next bento blogger who also worked hard on a Seuss lunch.  Please make sure to visit all our pages to check out my fun, creative bento friends !

I also discovered that this is my 100th post!  Yea, me!

It’s still “Q” week at school so she chose the quacking quackeroo from the Dr. Seuss ABC book.  I hand carved a gardein brand  “chicken” breast for the bird which was leftover from dinner last night.  I hand cut and carved the carrots out of organic mini carrots and also a bit for the tongue.  His eyes are small pieces of fruit leather.  The marshmallow fuzzy collar is made from vegan marshmallows by sweet & sara.

The Q above the quackeroo is made with whole grain bread, and the orange star shaped silicone cup is filled with edamame.  On the top right are watermelon stars and underneath that are pieces of blood orange.  Below that in the purple cup are green tea rice noodles with carrot stars on top.

Little Miss A’s very favorite Seuss story is “Cat in the Hat” or cat hat as she calls it.  I rolled out whole grain bread with a rolling pin which makes it much easier to cut and cut out Cat in the Hat.  His bowtie and facial features are all fruit leather.  His hat is strawberry and banana slices, and the umbrella is the kind you find in fruity drinks here in Florida!  The sandwich has Smart Deli “turkey” and Veggy “cheese” inside.  In the top right red cup is the same green tea pasta with watermelon fish, and below in the blue cup are edamame and a cucumber pinwheel.  Both girls’ lunches are packed in Easy Lunch Boxes.

Things I used to make this lunch:

So the Bento Blog Network is having Hello Kitty week.  I put in a lunch from last year, but I am overdue for a Hello Kitty lunch considering how crazy Miss G is over her.  This one would have been fabulous had I put it together last night.  Since I did it in a rush this morning I had to patch a few botched cheese oopsies.   The actual sandwich is cut from a circle biscuit cutter on Rudi’s 14 Grain Bread with almond butter & jam.  The cheese for Hello Kitty’s face is Veggy brand “Mozzarella” cheese made from soy.   It tastes just like cheese to me but it’s a lot more fragile to cut than real cheese (hence the tearing).  I used a template and a tiny paring knife to cut her face out. The bow underneath was a bit mangled so I made a new one of a raisin in the middle and 2 Craisins for the outside.  The whiskers are fruit leather strips poked into her face to stay.  The top left cup has watermelon and strawberry flowers and the top right cup has spinach leaves for garnish, blueberries underneath and a plum slice flower.

Little Miss A has been a super picky eater as of late.  The terrible 2s have really set in with her.  She’s come out of her little shell chucking food and climbing furniture like a pro these days.  Appropriately she gets a little monster today for lunch.  On the right side are quinoa veggie curl pasta with eggplant meatballs.  His eyes & nose are made from the same Veggy “cheese” slice, his mouth is a crinkle cut mini carrot and above his eyes are Daiya vegan  “cheese” shreds.  On the left are watermelon and strawberry flowers packed in her polar bear bento box by Gel-Cool.

I had a long, frustrating day yesterday with the girls so I decided to pour it into making some extra special bentos for today’s lunches.  They both love Olivia the pig on Nick Jr.  Their friend, Ada Sofia, loves her more than them both combined so this is for her too.  And it’s a continuation of the letter “O” week at school where they both learn about everything having to do with the letter and  practice writing their “O”s.

Miss G gets the more elaborate princess Olivia in her red gown.  The “bread” is flatbread with veggie “meat” and “cheese” slices and the details are in fruit leather in her stainless LunchBots bento container.

The separate container has freshly picked sugar snap peas and strawberries from a local farm with a prune for good measure (iron & fiber and vitamin A).  She also has a little pic container full of unsalted mixed nuts (cashews, pistachios and a big walnut).

Miss A gets the big Olivia face made from the same.

Her heart container has fresh strawberries, a little pig container with lid of raisins inside, a pink container of the same type of mixed nuts and dried apricot chunks.  Both girls have ice waters with their lunches.
