It’s Meatless Monday!  I’ll post my variation of the recipe below for those interested.  Miss G has forbidden (black) rice topped with stir-fryed veggies and a small sauce container of soy.  At the top left are dried cranberries, goji berries and dried edamame.  At the top right is a pumpkin clementine all packed in her Easy LunchBoxes container.

Meatless Monday Stir Fry with rice:

Choose any kind of rice that you have handy and cook.  While rice is cooking, cut up the vegetables that you’d like in your stir fry.  I had broccoli, onions and carrots.  I saute them in water and cook until tender.  I also made a first attempt at brown sauce.  I used 1/4 cup soy sauce, 1/3 cup vegetable broth, 1/3 cup of molasses, 1 teaspoon of grated ginger and 3 teaspoons of minced garlic.  Next time I will add 1 tsp of cornstarch at a time until it thickens a bit.   This sauce is definitely something you make to suit your taste.  My kids won’t eat a lot of ginger so I minimize it.  Cook ingredients in a sauce pot over medium heat for about 5 minutes and pour over rice and veggies.  Dinner is served!

Miss G’s Happy Tiffin container is filled with plum sections and a half of an apple.  The round container is filled with peach flavored almond milk yogurt.

Miss A had to skip camp today due to a runny nose so I sent Miss G to school with her small square bento.  From the top left she has organic nectarine sections, star shaped sandwiches on Rudi’s Whole Grain bread with almond butter & jam and organic red seedless grapes with a star baran (food separator/decoration) on top.

My husband had another baby green salad with baby bok choi and spinach.  I found a black radish at our local Whole Foods which I’d never seen before.  It’s larger than the traditional red radishes and a charcoal colored black on the outside, but it tastes very similar to the red radishes and is completely white in the middle.  The black radish slices are in the middle, next are small slices of a baby zucchini, and I also julienned a larger carrot I had left in the fridge for the outer edge of the salad.  Not shown is his favorite ginger dressing.  At the top left are mixed nuts and goji berries and in the flower at the top right are strawberry pieces packed in his Easy Lunch Box container.

Things I used to make this lunch:

Off to camp for another day for the girls.  We recently did an elephant lunch, but it seems that the kids never tire of animals, tv characters or Hello Kitty these days.  I made an elephant sandwich on Rudi’s Whole Grain bread with Tofurkey deli slices and a bit of Tofutti cream cheese.  I put a small hat on the pachyderm, a raisin for an eye and a piece of the bread crust for the ear.  Next to the elephant is a small bucket of sliced grape halves.  At the top left are watermelon pieces with a green elephant pick.  The top left container has kiwi and lychee fruit pieces packed in her purple Hello Kitty bento box.

Miss G was super excited because she got a new Goodbyn Bynto Box in Raspberry color.  To be honest besides the hot pink, the sticker pack to decorate the box was FAR more interesting than the new box for them.  I would like to personally thank Goodbyn for the hour of quiet time I got while both girls plastered stickers all over their new Bynto lunch box and water bottle

The Bynto comes with the water bottle packed in the middle compartment, but I chose to fill it today. From the top down she has organic green grapes with a balloon string pick and watermelon squares with flower picks.

I made pizza bread in my new flower shaped canape bread tubes.  The easiest way to do this is to buy store bought bread or pizza dough.  I use a bit of cornmeal while unrolling so it doesn’t stick.  Once you’ve rolled the tube out flat, spread a thin layer of the desired fillings.  I used marinara sauce and a small bit of Daiya brand vegan mozzarella cheese shreds sprinkled over it.  Then I rolled it up and slid it into the greased bread tube.  You will need to let the bread rise for 30 min to an hour until it reaches the top of the tub.  I bake mine upright in the tube and place the tube on a baking sheet since some of the filling bubbles out.  I baked mine at 375 for 30 minutes.  When I checked it, it was still very doughy so please make sure to set the timer and check as every oven is different.  You will also have to plan on at least 15-20 minutes of cooling time for the bread and fillings to set.  Then use a bread knife to carefully cut slices.  I’ve done this before with pesto sauce, cinnamon and sugar and even jam.  It always turns out differently and leaves a pretty swirl.

The middle compartment has 2 pieces of flower shaped pizza bread and a flower cup of whole wheat elbow macaroni with marinara, soy meat crumbles and a bit of Daiya cheese sprinkled on top.  At the bottom left are raspberries and bottom right are dry roasted cashews and dried, raw goji berries.  Goji berries are a small red berry native to southeastern Europe and Asia and also known as a wolfberry.  They are high in antioxidants, Vitamin A and have many other health benefits.  Please ask your physician if you are on blood thinners, blood pressure medication or have diabetes as they can interfere with medication.  I use them mostly mixed into salads or trail mix as a sweetener like raisins.  They have a sweet but distinct taste.  I recommend buying them in a tiny bag as a little goes a long way with these dried berries.

We’re back from a fun, long weekend away.  I hope everyone had a relaxing weekend and a safe 4th!  I can’t say I planned well for lunches today since I was feeling especially sleepy this morning.  The girls are off to a week of summer camp at their regular school, and the adults are back to the grind.

I got a new bear face sandwich cutter.  To be honest it was not what I expected.  Maybe that is because I haven’t learned how to use it properly yet (instructions in Japanese), and maybe I should have planned ahead.  In any case, Miss G gets to be the guinea pig on this one.  Whole grain bread, although it is the best FOR you does NOT make the best shapes and mold well in presses.  What I got was a bear with a bit of a skull fracture.  Oops!  It’s definitely not the prettiest lunch I’ve ever made, but I believe it’s important to show you that nothing’s ever perfect.  My daughter will still think it’s fun and like it even if his face is falling apart.  To salvage his face I stuck raisins in his eyes, almonds in his ears, a prune (which she really does love and eat) and dried goji berries in for the mouth.  The goji berries are a newer food to my girls.  I don’t expect them to eat it all, but they must TRY them.  The bread is Rudi’s brand Nut & Oat bread filled with almond butter & strawberry jam.  Above the bear at the top left are mini carrots & dip in the bear container.  At the top right are bear shaped watermelon pieces packed in her Easy Lunch Boxes container.

Miss A gets a simplified version with little bear sandwiches today.  She doesn’t do well with the bigger sandwiches so I made her 3 little bears.  Hers are also almond butter and jam on whole grain bread.  With the sandwiches are organic raspberries, a bear pick and bear baran (food separators) just for fun decoration.  On the left side of the bento box are mini carrots, bear shaped watermelon pieces and pineapple chunks with more fun bear picks.

My husband gets a baby spinach salad made into a funky food face.  Broccoli sprouts make up the hair, cherry tomatoes for the eyes, a sugar snap pea for the nose, a carrot for the mouth cut with a crinkle cutter and walnut ears.  I buried more walnuts and peas under the face for him to find while he’s eating.  At the top left are pineapple pieces and at the top right is leftover whole grain elbow macaroni with marinara sauce & veggy crumbles packed in his Easy Lunch Boxes container.

I am not posting for the rest of the week so I can spend time with my family for a long weekend.  Just wanted to wish everyone a happy and safe 4th!

Miss G had a large star made from Rudi’s Whole Grain bread and a pumpernickel star sandwich.  Next to that she has a star container of organic cherries.  At the top left is a homemade mini pumpkin spice muffin.  I cut a star out of the top and filled it with a small bit of vegan cream cheese.  At the top right are watermelon and cantaloupe stars packed in her Easy Lunch Box.

Little Miss A had her version of the same with stacked peek-a-boo star sandwiches.  Above the sandwich is the same homemade mini pumpkin spice muffin with a small star of vegan cream cheese in the top and a star of cherries. At the top left she has blueberries sprinkled with raw goji berries on top.  At the top right she has cantaloupe and watermelon stars packed in her Easy Lunch Box.

My husband got in on the festivities with as much flair as I could pull off in his salad.  His salad is baby kale & spinach topped with sunflower seeds, zucchini stars and cherry tomatoes.  At the top left is a black plum and at the top right is a homemade vegan cornbread muffin all packed in his Easy Lunch Box.
