I couldn’t resist.  The girls have Mouse fever.  Like Hello Kitty, they can never get enough of Disney.  I found some Mickey & Minnie sandwich cutters on eBay, and I had to have them.  I made them chocolate almond butter and agave nectar sandwiches with fresh fruit.  From the top are pineapple, pear, mango and apple mice inbetween the sandwiches.   I found the fabulous vintage looking plate on clearance at my local Target store.

I rely on a few websites for great tasting, vegan recipes.  This one is adapted from Oh She Glows. Angela Liddon has amazing, original recipes that taste great.   This one’s called the Back On Track Wheat Berry and Bean Salad.  You can revise it how you like as I did.  I had spelt berries and garbanzo beans in the pantry which is what I used.  I love extra vegetables so I used lots of grape tomatoes, cucumbers, 3 colors of sweet peppers and green onions.  The dressing is also by taste.  It’s a great, filling salad for summer or a potluck dish too.

My husband is having a mixed green salad with broccoli sprouts along the sides.  On top of the sprouts along the edges are sweet red peppers and cucumber Os.  His side of spelt berry salad is at the top right and heart shaped strawberries at the top left packed in his Easy LunchBox container.

Today’s lunch was a quickie.  My kids were starving and not willing to wait for my usual lunch antics and photos before eating.  Sheesh!  After all, they are 2 & 4.  They have the patience of a gnat.  So I whipped out my latest fun tool to try out, and this is what I got.  4 hearts and a diamond sandwich pockets made from Rudi’s Whole Grain bread, Justin’s Almond Butter and jam.  The owls are “sitting” on 2 Snyder’s braided whole grain pretzel sticks.  There are 2 heart watermelon pieces and a bunch of seedless red grapes below.

My husband gets a baby green salad with swiss chard, arugula and spinach underneath.  On top are orange heirloom tomatoes slices, baby carrots, chopped celery, green onions and sugar snap peas packed in his Easy Lunch Box.  At the top left are watermelon chunks and at top right are Rainier cherries.

Quick summer lunches can be as easy as breaking out that container of cookie cutters.  It takes no more time than a normal lunch to do these.  I started with candy eyes which I still use sometimes, but fruits & vegetables can be just as quick.   I recommend using leftovers from dinner & getting creative rather than cutting into new fruits & veggies.  I often pack a small container of leftovers while we’re cleaning up dinner of things that I could include in the kids’ lunches.

Today’s lunches were simple.  Miss A has a hedgehog with a black bean for an eye.  At the top left is a quinoa salad I made the night before that makes great leftovers.  It was made of quinoa, black beans, lemon juice and lemon zest, tomatoes and green onions.  At the top right are halved green grapes with a watermelon crown.

Miss G had a cartoon looking dinosaur sandwich for her lunch.  At the top left are honeydew and watermelon animals at at the right in the green clover are edamame.

Bentoriffic One Year Giveaway

My big shout out this week goes to my kids’ teachers.   I love my kids.  They’re wild, fun and ran like a pack of small, cute wild animals last week while they were out of school.  I am hoping that the teachers got a bit of a break because today it’s back to school for them.

My husband got a big spinach salad today with snow peas, carrots, tomatoes, and scallions.  In the small striped containers are his ginger dressing.  He also has green grapes and leftover Hoppin’ John (black eyed peas and rice) salad with tomatoes, scallions, italian parsley and celery seasoned with salt, lemon juice and garlic packed in his Easy Lunch Box.

Miss G has a seascape today.  Now that we’re back to school it’s “S” week.  The water is blue colored barley.  The starfish is an almond butter and jam on whole wheat pita, the sun is a yellow tomato, the waves and whale are made from Veggy brand soy “cheese” and the whale’s eye is a piece of quinoa.  The top right are watermelon stars and on the bottom right are green grapes and a plum octopus with Veggy cheese eyes and mouth all packed in her Easy Lunch Box.

In keeping with the “S” theme again today for little A, she has a whole wheat pita STOP sign sandwich.  On the right are green grapes with a plum and watermelon heart on top and on the bottom right is a peeled clementine packed in her LunchBots Duo.  Both girls have ice water with their lunches.
