I usually start with my kiddo’s lunches, but Miss G was out sick a day last week so today I’m starting with  my husband’s lunch.

I tried my hand at making Mujadara, a lentil dish with mixed rice and carmelized onions.  It’s a very simple, budget-friendly recipe, and the key is to carmelize the onions well.  The longer they cook, the sweeter they become.

This recipe is revised from one I found through Vegetarian Times Magazine.

  • 3 cups rice (I used a brown and wild rice mixture)
  • 1/4 tsp. salt
  • 2 large onions, thinly sliced
  • 1 15-oz. can lentils, rinsed and drained, or 1 ½ cups cooked  lentils
  • ½ cup chopped fresh parsley
  • 2 tsp. grated lemon zest
  • 1 tsp. ground cumin

I made about 3 cups of brown and wild rice.  While the rice was cooking, I sliced 2 whole onions (I had red onions) in thin slices, and cooked them in about 1/8 cup of water on a medium-low heat adding water as necessary so they don’t stick.  I sprinkled about 1/4 teaspoon of sea salt over the onions an cooked for roughly 30 minutes.  I used red lentils which is what I had in the pantry.  While the onions were still cooking, I grated lemon zest and cut fresh parsley.  When the rice was done cooking, I poured it into a large bowl, fluffed, and stirred in the onion,  parsley, lemon zest, and cumin and then placed the rice mixture on plates and scooped the lentils on top.  You can also garnish for dinner with a sprig of parsley or lemon wedges.  It was very simple and delicious!

The above photo is the leftovers packed in an Easy LunchBoxes container with organic raspberries, watermelon and a cantaloupe $ sign for the breadwinner.  I made a sun from the lemon wedges I zested and stuck a parsley sprig in for decoration.

Little Miss A had a very simple bento herself.  In her LunchBots Quad are organic fruits (grapes, raspberries and watermelon pieces) with small heart shaped almond butter sandwiches.

We are big fans of matryoshka dolls (Russian nesting dolls) here.  I think I was more excited than my girls to have found this 2 tiered bento box on line.

Little Miss 4 year old had her new bento box today full of fresh fruits and vegetables.  On the left are pineapple chunks and red seedless grapes with a carrot flower on top.  One the right side are Rudi’s brand spelt tortilla wraps with almond butter, carrots and green apples julienned and sliced with cherry tomatoes and a cucumber flower below.

For her snack today, she has a Happy Tiffin packed with organic peaches slices, plums and raspberries. Not shown is her Kleen Kanteen bottle with ice water.

Miss G has days of the week lessons in spanish this week so I made her a Lunes lunch today.  In the top yellow flowers are raspberries with a blackberry in the middle and a sectioned plum on the right.  In the middle is her ice water and the bottom compartment are almond butter and jam sandwiches with LUNES cut out in Stretch Island fruit leather letters packed in her raspberry Goodbyn Bynto box.

For her snack today, nectarines, blueberry picks and strawberry hearts are packed in her Happy Tiffin stainless bento.

Little Miss A, 2, is having an insect filled lunch today.  They are studying bugs this week so I’m playing along.  She has Wholly Guacamole frozen in a spider cup.  The spider’s 8 eyes and mouth are made from kalamata olives.  Underneath are pretzel chips for dipping.  At the top right are organic raspberries on spider picks. Below that are strawberries and blueberries on ladybug picks.  And at the bottom left are plum sections with a bee pick packed in her LunchBots Quad.

My husband has a green salad today to go with his lunch.  He has mixed baby greens, organic green zebra stripe heirloom tomatoes, scallions and sugar snap peas.  At the top are mini carrots and strawberries packed in his Easy LunchBox container.

As long as I get creative with it, my kids will eat just about anything.  I took last night’s teriyaki marinaded gardein brand (faux) chicken over brown rice with quinoa.  I used a bear shaped rice mold to reshape the rice/quinoa mix.  The bear cup is filled with small pieces of the soy “chicken”.  Behind the bears at the top are 2 small bear sandwiches.  The water bottle in the middle compartment is great for keeping things compact in the lunch box, and it doesn’t leak.  I do handwash this whole box and the bottle.  At the bottom are watermelon pieces in the middle, strawberries on the side and a skewer of blueberries packed in her Raspberry Goodbyn brand bynto lunchbox.

For her snack today Miss G has mini organic carrots and organic green beans with honey mustard to dip in the bear container.

Miss A (2) is still allowed to take character themed items to school.  I found this small, 2-tiered bento box on eBay this summer with Stitch on it from Disney’s Lilo & Stitch.  She LOVES it.  We’ll be using it quite a bit this school year as it’s the perfect size for her. 

On the left are small almond butter sandwiches shaped like chicks and dried cranberries below.  On the right are organic blueberries with a watermelon chick, strawberries and watermelon pieces.  She also has a snack of nectarine and pineapple pieces not shown.

Things I used to make this lunch:

Back on the school train this week for a 4 day week.  Today I used the Lunch Punch train cutter for Miss G’s sandwich.  The wheels are fruit leather, and the cat is the train driver.  She has watermelon pieces, strawberry hearts and small honeydew melon trains below packed in her LunchBots Uno.

Miss A had her first day back to mom’s morning out.  She has a fruit heavy lunch with plums, pineapple, watermelon and raspberries and blueberries clockwise with an apple shaped sandwich for lunch packed in her sistema bento.

I also spent some quality time at the community pool over the weekend with the family.  We had a chance to try out our new picnic sized bento box from BentoUSA.  It was great for family sized snacks without the runny mess!  Hope everyone had some quality downtime to recharge over the weekend.

Things I used to make these bentos:

Little Miss 2 year old will be back to school next week so I will be a lunch making fool next Sunday night!  Enjoying a few extra moments until then.  Today I packed Miss G (4) black bean wraps.  I used a Rudi’s Spelt tortilla, spread on some Tofutti brand non-dairy cream cheese in a thin layer.  I added black beans, a tiny bit of shredded purple cabbage, julienned carrot strips and a tiny bit of Daiya cheese shreds.  I rolled it tightly, wrapped it in press & seal wrap whole and refrigerated it overnight.  I cut it into small wheels in the morning so it would be easier to cut and stuck in some cute animal picks to hold them together.  I also included grape tomatoes which she loves, sliced kiwi and strawberries packed in her LunchBots Uno.

For snack time today I packed her a small, double tiered bento box.  In the bottom are papaya flowers and raspberries and the top container has a halved dill pickle, more grape tomatoes and assorted olives.

Things I used to make this lunch:

Lots of love in these lunches today.   Some leftover love too.  I don’t like to waste food so Miss G has leftover spelt pasta with marinara today.  At the top right is forbidden rice with sweet potatoes and a baked potato heart on top from last night’s dinner.  In the main compartment are mini almond butter heart sandwiches on Rudi’s Whole Grain bread, strawberry and watermelon hearts and green seedless grapes packed in her Easy LunchBoxes container.

Miss G started a new preschool this fall, and she’s not allowed to have any characters on her lunchboxes, water bottles, etc.  Luckily we get a ton of use out of our Easy Lunchboxes and LunchBots containers.  I did scour the internet for new bento boxes to have on hand, and I found a company called Happy Tiffin.  They make old school tin lunchbox containers, stackable stainless containers, and they have an adorable line for kids that is perfect for us.  The one we chose is called “Lunch Time”.  They’re a bit more expensive, but from experience my stainless bento boxes stand the test of time.  Since these are going to be passed down to Miss A (2),  I decided it was worth it.

I packed the Lunch Time tiffin for snack with strawberry hearts, large green grapes and coconut milk peach yogurt in the stainless container for dipping.

My husband had leftovers today too with a giant bento of leftover pasta (not shown).  He has a mixed green salad with purple cabbage and carrot hearts.  At the top left are seedless green grapes and top right are jicama slices sprinkled with chili powder and lime for squeezing on top packed in his Easy LunchBoxes container.
