I’m outta here!  It was a last minute decision, but I think it will prove to be a great one.  I was invited last minute to the Niche Mommy conference in New Orleans this week.  I’ve never been to New Orleans so I’m really looking forward to checking the French Quarter out.  My high school symbol was the fleur de lis (goes with my French loving theme well) so I decided to do a Fleur De Lis salad for my husband.  After all, he has to take care of the kids while I learn all kinds of new blogging techniques, social media tricks, hopefully improve my photographic skills and maybe have some good old fashioned girl fun while I’m away.  The salad is baby spinach and lettuce from the local organic farm.  On top is a heart of tempeh (fermented soybeans) which reminds me of a heavy barley.  Sliced mushrooms and fleur de lis cucumbers are also on the salad.  At the top left is quinoa salad with scallions, italian parsley, red and green peppers.  And at the top right are peach sections packed in his Easy LunchBox container.  Not shown is his ginger salad dressing.

I packed myself an Easy LunchBox for the trip today.  From the top left are dried mango pieces, pretzels and crackers for dipping.  In the small blue silicone cup is Eggless Salad by one of my favorite vegan chefs, Lindsay Nixon, better known as the Happy Herbivore.  Lindsay’s recipes are simple enough to get dinner on the table in 30 minutes, and yummy enough that they will become weekly staples in your house.  If you’re looking for meatless and/or dairy free recipes, I highly recommend purchasing her cookbooks.  I have 2 and a third pre-ordered from Amazon I like them so much!  Organic strawberry hearts mini almond butter sammies and Sabra hummus make up the rest of my lunch.

I’m not sure if my girls have seen Fantasia, but that would be the closest exposure they’ve had to a wizard. Today Miss G gets a wizard sandwich with vegan cheese stars and a crescent moon on his hat. He has candy eyes, a dried cherry piece for a nose and Daiya vegan shredded cheese for his beard. His wand is a pretzel stick with a strawberry star at the top. At the top right are watermelon stars and the bottom right are crescent sliced peaches packed in an Easy Lunchbox.

Little Miss A has some bad weather for lunch. Because it’s W week they are talking about different types of weather. I made her a cumulonimbus cloud with lightning bolts coming out of the bottom. She also has some Veggy vegan cheese smaller clouds above the sandwich, and at the bottom right of the sandwich are Snyder’s pretzel snaps. At the top right are frozen guacamole pinwheels and at the bottom right are strawberry slices with a Veggy cheese umbrella on top.

Thu hubby also gets another salad to go with his lunch. He has an all spinach salad today with cucumber slices, mini carrots and edamame sprinkled in. (Not shown is a container of ginger dressing). Last night I also made oven roasted chickpeas. They turned out pretty well although some are a bit too soft for my taste. They are like a healthier version of corn nuts if done properly. I rinsed & dried the beans, drizzled a bit of olive oil, placed them on a cookie sheet lined with parchment paper & baked at 350 degrees for about 40 minutes. Then I used sea salt & garlic powder to season once they were done (shown at top right). On the bottom right are mini grape & plum tomatoes from our plants out back. All 3 lunches today are packed in Easy Lunch Boxes.

Thursday I was in a rush so both girls had a hodge podge of things in their lunches.  The main theme was elephants.  I just got a new Lunch Punch that I used for Miss G’s bigger sandwich that has a mother & baby huddling underneath.  I included a BabyBel cheese with a heart cut out.

The heart bento has peaches on the right side and on the left are dried cherries and Funky Monkey brand dried crunchy pineapple pieces.  She also had an applesauce pouch and an Orange Lifeway Kefir pouch.

Little Miss A is still very excited about school, and it’s a bit new for her so finding what she will eat is a bit tricky.  She hasn’t been much into the sandwiches, but I included 2 very small elephants PB & Js for her on whole grain.

The heart bento for Miss An included Annie’s Organic macaroni shells on the right with colby jack butterflies on top.  The left side had halved grapes on the bottom, dried cherries mixed in with watermelon butterflies.  She also had an Orange Lifeaway Kefir and an ice water.
