Wednesday is a perfect day for leftovers.  Mom’s feeling a bit under the weather so dump dinner in an Easy LunchBoxes container & voila.  Lunch is served.

Lunch today (dinner last night) is brown rice with mixed vegetables (broccoli, carrots, snow peas and onions) on top.  I packed a tiny sauce container of soy sauce.   In the top left container are grape tomatoes and in the top right are red grapes.

In her Happy Tiffin stainless bento, Miss G’s snack is a seckel pear, clementine sections, kiwi slices and a container of roasted pumpkin seeds.

 

Little Miss 2 year old has a LunchBots Quad for lunch.   From the top left are clementine sections with a star container of pumpkin seeds, red seedless grapes, star sandwiches with pumpkin pecan butter and a small Hail Merry brand chocolate vegan macaroon, and at the bottom left are mini carrots and sugar snap peas.

Happy Monday, everyone!  Hope you all had a safe Halloween.  I packed some post-Halloween pasta today for the girls’ lunches.  I cooked some farfalle (butterfly) pasta and added orange grape tomatoes and black olives for the fall/Halloween look.  In Miss G’s Goodbyn Bynto, I added a small blue container of vegan parmesan for sprinkling over the top.  Next to that in the bottom compartment is a peeled clementine orange and coconut date balls for a treat.  Her ice water fits in the middle compartment.

In her Happy Tiffin stainless bento is half of a d’Anjou pear surrounded by red grapes.  In the round container is cinnamon applesauce for her snack.

Miss A usually has a smaller version of what everyone else is having.  In her LunchBots Duo is a peeled clementine at the top left surrounded by red grapes.  Below that is a coconut date ball surrounded by dried apricots.  On the right side is her farfalle pasta with halved grape tomatoes and black olives.  Hers is already sprinkled with a bit of vegan parmesan to minimize mess.

For her small snack today, she has cashews and a mini box of California raisins.

Things I used to make this lunch:

My 4 year old loves her sandwiches.  She has whole grain and pumpernickel puzzle pieces.  I used the The Lunch Punch puzzle piece cutters for this one.  I cut the bread first, fill the sandwiches and then reassemble the pieces.  To the left is a pick of grape tomatoes and dried apricots.  Above the sandwich are red seedless grapes.  In the top left compartment of her Easy LunchBoxes are heart shaped strawberries and the top right are apple pieces.  I soak the apples immediately in a bowl of cold water with a bit of lemon or lime juice to prevent browning.  I soaked these for about 10 minutes and then toweled dry and put in the lunchbox.

Thanks to a recommendation from a few blogging friends a few months ago, my kids watched the Disney movie Lilo and Stitch for the first time.  They are officially hooked.  In fact, even though the original movie was in 2003, the girls decided they had to be Lilo and Stitch for Halloween.

Miss A is loves her little alien Stitch.   I made her this little Stitch bento for school this week.  I received the Stitch bento from one of my generous blogger friends and found the cookie cutters, picks and small containers through eBay.  All the Stitch baran are available at All Things For Sale.  The links and photos are listed at the end of this post.

The mini Stitch sandwiches are made from Rudi’s Whole Grain bread with SunButter.  Underneath the sandwiches are apple slices.  To the left are red seedless grapes, mango slices, raspberries and a piece of kiwi.

A project I volunteer for is a Pack A Sack food program at my church.  The program feeds kids at a local elementary school each weekend that would otherwise go hungry.  Last year I helped bring fresh fruits and vegetables to be added to their packed meals.  For Halloween I did a decorated clementine for each child in their meal before Halloween.  They were a huge hit with the kids.

These are a small sample of the clementines I did this week.  My husband even helped draw them and enjoyed the project with me.    Each one is different.  I used a non-toxic Sharpie marker.  The oils from the fruit dry them out quickly, but it’s worth the fun.  It’s even a great, healthy idea for your trick or treaters.  Hope everyone has a relaxing weekend ahead!

2011 Halloween Party Ideas For Kids

Miss G (4 years old) is having a batty bento.  She has a larger bat and smaller bat sandwich on top.  They’re pumpkin butter and almond butter sandwiches made from Rudi’s Whole Grain bread and cookie cutters.  Above them are a seckel pear with bat sticker and red seedless grapes.  At the top left are mini carrots and grape tomatoes and at the top right is cannellini bean bruschetta with multi colored heirloom tomatoes packed in her Easy LunchBoxes container.

Miss G’s snack today is Sabra hummus with pretzel sticks, dried apricots and the heart shaped container with a bat has a few cinnamon apple almonds in it as a treat.

My husband had something far less organized for lunch.  I grabbed an Easy LunchBoxes  container and threw in a rainbow of fruits & veggies.  In the main compartment are snow peas, carrots, grape tomatoes, a seckel pear and a mandarin orange.  At the top left he has quinoa lentil tabouleh from Whole Foods and at the top right is my homemade cannellini bean bruschetta.

The quickest, simplest way to get your kids to eat their fruits and vegetables is to make it fun!  If it has a peel that they’re not going to eat like a banana or an orange, color on it or put a sticker on it!  This was a simple Sharpie marker on a clementine orange that took about 1 minute to make.

Miss G’s first day in pre-Kindergarten was yesterday.  I definitely had a proud mom moment realizing she was excited to go and well socialized enough to look at the positives of new friends and a fun new classroom.  I also had my sad moment where I felt like I was saying goodbye to my oldest baby.  She is definitely all girl now and ready to go out & meet new friends.  It’s hard to let go sometimes.  After all, it seems like only months ago when I was staring down at a new baby wondering, “What do I DO with her?”.  There is no manual.   As parents, we just do our best one day at a time.  Off to school she goes.

She will be in school until mid-afternoon which means she needs lunch AND snacks daily that I pack for her.  She wanted her trusty almond butter and jam today, but I told her we’re working on more variety from now on.  For today, the apple sandwiches are on Rudi’s Whole Grain bread with Justin’s Maple Almond butter and strawberry jam.  Along with the sandwiches are an apple pick of red seedless grapes, a silicone apple container with small Apple Cinnamon Larabar bites (I cut them into small pieces) and grape tomatoes.  She also LOVES Israeli cous cous (top left) so I mixed it with quinoa and edamame which were cooked in vegetable broth.  At the top right are blackberries and raspberries packed in her Easy LunchBox container.

For her snack I used a small 2 tiered bento box. The top compartment is mini carrots and sugar snap peas.  In the green sauce container is Tofutti sour cream for dipping and below that is a mini vegan apple cinnamon muffin.  At the bottom are dried cranberries on the left and the right has sprouted pumpkin seeds and cashews.

The hubby has a salad again.  His mixed baby greens are arugula, tat soi, baby green and red chard, and baby bok choi.  On top is a piece of teriyaki marinaded tofu, a yellow roma tomato, a green heirloom tomato and sprouted pumpkin seeds on the sides.  At the top left are blueberries and raspberries and the top right is a wild rice salad with red & green peppers and pecans packed in his Easy LunchBox container.

Today is the first day back to school for us.  Not sure that I’m feeling quite ready for this, but here we go.  These lunches are from last week’s playdate at a friend’s house.  Tomorrow I will post the back to school lunches.  I got 2 new sandwich makers to try.  The first one is from Bento USA by All Things For Sale.  I saw a lunch that they did, and I thought it was the cutest thing.

Expect more pandas from us throughout the school year!  This makes sandwich pockets and even toast cute for your little picky eaters.  Fill the panda face with vegetables or fillings to make them different colors or simply use different kinds of bread.

I was in a rush so I went for simple.   The panda sandwich is on Rudi’s Whole Grain bread with Justin’s Almond Butter and strawberries in the middle.  A homemade mini vegan cornbread muffin is above the sandwich and heart shaped strawberries.  At the top left are organic raspberries with vegan chocolate chips in the middle and panda baran.  At the top right are sliced red seedless grapes and sliced dried apricots packed in an Easy LunchBoxes.

And I got a new sandwich cutter from Pampered Chef friend.  It’s called the cut & seal & makes uncrustable looking sandwich pockets.  I get the feeling I’ll be using this one a lot as makes things quick for me, and I can easily make sandwiches ahead of time and freeze them!

I decided to make a pig out of it for Little Miss 4  year old.  I used candy eyes and the heel of the bread is great for dark accents (the nose and ears).  She also has a vegan mini cornbread muffin and blueberries.  At the top are carrots and Tufutti sour cream for dipping in the small pig container.  At the top right are strawberry hearts with a raspberry in the middle and pig pick packed in her Easy LunchBox.

I packed myself a plain almond butter sandwich and a LunchBots Duo full of fruit.  From the top left are fresh, local Florida mango chunks, blueberries, rasperries and mini carrots.
