Happy Halloween, everyone!

Hoping that you have all the craziness behind you by now (except for tonight, of course).  I stayed up late making homemade Stitch ears for my 2 year old’s alien costume and planning the last of the Halloween food until next year.

Ahh, the last of the Halloween lunches!  Miss G, the 4 year old, has a LunchBots Quad with raspberries and an RIP headstone pick, a seckel pear with sticker, dragonfruit pieces with a skeleton pick and at the bottom left are mango pieces with a dragonfruit witch.

I found these little wooden coffins in Michael’s, and I finally put them to use.  I decorated the lids with Halloween stickers for fun.

I hand cut the sandwich to fit inside, and added a Wilton googly eye pick and a fruit leather mouth.

I also found these paper boxes for crafting at Michael’s, and I used them for snack bentos today.  Miss G’s is a jack-o-lantern face.  I filled it with cashews, dried cranberries and moon shaped dried apricots for her morning snack.

My 2 year old has a smaller wooden coffin for her sandwich.  Hers is a light activated box.  It cackles loudly when it opens which she loves.

She also has an almond butter & jam sandwich with a Wilton eye pick and Stretch Island fruit leather mouth, eyebrows and fangs.

Miss A has a pumpkin cup with mango pieces and a dracula pick with cashews above.  On the right are a seckel pear, raspberries, dried apricot crosses and a skeleton hand.

For her morning snack is a small coffin with dried cranberries and a handful of bone shaped candies.

Need quick & healthy last minute Halloween snack ideas?  Here are a few that your store won’t be out of if you need something fast.

Raisins-They’re like nature’s sugar, you can use them to make eyes on just about anything.  Raisins are full of vitamins, minerals and phytonutrients.  Eating raisins can help your energy levels.  They’re high in the best kind of natural sugars.  They also promote healthy bones since they contain high levels of calcium.

Clementine oranges or mandarin cuties-Mother Nature’s fast food.  Grab a box or bag and a few Sharpie markers or a pack of fun Halloween stickers & get creative.   A basket of these are more appealing to little ones than you may think.  For some reason stickers and fun faces make it enticing.  The best part is that they’re packed with nutrients like calcium, potassium and vitamin C.

Popcorn– NOT the microwave kind, the real no additive kind.  Pop up some corn in an air popper or a paper bag.  Here are the paper bag instructions:

We like to sprinkle a light dusting of sea salt or sometimes a bit of cinnamon on top for an afternoon snack.  For my kiddo party later today, my neighbor and I are putting popcorn in witch hand shaped bags as a snack.  Popcorn has more antioxidants than some fruits and vegetables so skip the heavy butter & oil and dig in!

Pumpkin Seeds-Roast a few lightly salted seeds at home, and you’ll be snacking on these minerals: phosphorus, magnesium, manganese, iron, copper and zinc as well as vitamin K and B.

A fiesta sounds a lot better than leftovers, right?  They don’t look so appetizing left in the bowls or on the plates after dinner, right?  So I put things in pretty silicone colored cups, call it something new and it’s lunch made from last night’s meal!

We had veggie crumbles with taco seasoning, and all the taco fixings. From the top left are blackberries.  Instead of tortillas or shells, I included sweet potato chips for her to dip in her soy crumbles and guacamole. Grape tomatoes which Miss G loves to eat whole are below the chips.   I put some sliced black olives on the soy meat crumbles (which are mixed with a bit of Tofutti sour cream.  I revised it a bit for the lunchbox version. At the bottom left is lettuce and some Daiya cheddar “cheese” dairy free shreds.  I’m quite sure she won’t eat the lettuce, but I try to include something new at almost every meal.   Instead of avocado slices, I froze guacamole in grape ice cube shapes.  It should be thawed by lunchtime for dipping.  All of it packed in her Easy LunchBox.

Her morning and afternoon snacks are packed in these smaller strawberry shaped bento containers.  The larger one has nectarine slices and pieces and halved strawberries.  In the smaller container are medjool dates and dried mangos cut into pieces along with dried cranberries and shelled pistachios.

And my husband had a left over fiesta too.  Underneath his veggie crumbles is the israeli cous cous mixed with quinoa.  Then a mix of soy taco flavored crumbles, black beans cooked in shallots, sliced grape and heirloom tomatoes, sliced black olives, lettuce shreds, Daiya cheddar cheese shreds and a side (not shown) of salsa verde as a topping.  At the top left are blackberries and sliced figs and at the top right a whole plum sliced into sections packed in his Easy LunchBox.

Miss G’s first day in pre-Kindergarten was yesterday.  I definitely had a proud mom moment realizing she was excited to go and well socialized enough to look at the positives of new friends and a fun new classroom.  I also had my sad moment where I felt like I was saying goodbye to my oldest baby.  She is definitely all girl now and ready to go out & meet new friends.  It’s hard to let go sometimes.  After all, it seems like only months ago when I was staring down at a new baby wondering, “What do I DO with her?”.  There is no manual.   As parents, we just do our best one day at a time.  Off to school she goes.

She will be in school until mid-afternoon which means she needs lunch AND snacks daily that I pack for her.  She wanted her trusty almond butter and jam today, but I told her we’re working on more variety from now on.  For today, the apple sandwiches are on Rudi’s Whole Grain bread with Justin’s Maple Almond butter and strawberry jam.  Along with the sandwiches are an apple pick of red seedless grapes, a silicone apple container with small Apple Cinnamon Larabar bites (I cut them into small pieces) and grape tomatoes.  She also LOVES Israeli cous cous (top left) so I mixed it with quinoa and edamame which were cooked in vegetable broth.  At the top right are blackberries and raspberries packed in her Easy LunchBox container.

For her snack I used a small 2 tiered bento box. The top compartment is mini carrots and sugar snap peas.  In the green sauce container is Tofutti sour cream for dipping and below that is a mini vegan apple cinnamon muffin.  At the bottom are dried cranberries on the left and the right has sprouted pumpkin seeds and cashews.

The hubby has a salad again.  His mixed baby greens are arugula, tat soi, baby green and red chard, and baby bok choi.  On top is a piece of teriyaki marinaded tofu, a yellow roma tomato, a green heirloom tomato and sprouted pumpkin seeds on the sides.  At the top left are blueberries and raspberries and the top right is a wild rice salad with red & green peppers and pecans packed in his Easy LunchBox container.

(at BentOnBetterLunches). I’m delighted to
have this opportunity to guest post on one of my favourite blogs!
Sarah is an inspiration in healthy food choices and creative bento
making! I chose our PlanetBox for this guest lunch, since I know she
doesn’t have one of those … yet!

We did Kid’s Choice lunches at our house today. That’s something we do
when I don’t have a lunch plan, and/or we are low on groceries, and
maybe don’t have enough of everything for everyone. I take out a
selection of what we do have from all the food groups, and let the
little ones decide what to fill the sections of their bento boxes
with. I’m often pleasantly surprised by their choices too!

3½ year old Birdie and I packed this PlanetBox together, but she chose
everything that went in it. Birdie loves elephants, so it was no
surprise that she wanted to include elephant picks, or that she chose
to put them in the strawberries and pluots – they were the first
things she asked to have in her lunch. I think she could happily live
on fruit alone – well, no, she’d want cheese as well. But we were out
of cheese.

She liked these colourful silicone mini squares, so we picked out some
little nibbles to fill them with – NatureBox dried apples &
organic Mighty Mix, raisins, and Annie’s Homegrown Cheddar Bunnies:

Like her mama, Birdie has a sweet tooth, so she also chose some
chocolatey peanut butter granola bars her big sister Bella made over
the weekend (that are secretly healthy), marshmallow stars, sprinkles
on her yogurt – specifically butterfly sprinkles. And she insisted
her spoon be included in this photo:

Of course, the sweets were the first things she ate. She eventually
did eat some of everything – although she spit the dried apple back
out, pronouncing it “yucky chewy”. Oh well, at least she tried it! A
sampler-style lunch like this is good for that.

My other sproutlets had similar lunches, except for my middle son, who
had his usual PB. Here’s his “plane” peanut butter sandwich, made with
a Lunch Punch:

else’s house while Sarah’s away – although I’m sure you’re looking
forward to her return, and seeing more of her terrifically artistic
& nutritious lunches – I know I am!
