I can see clearly now.  The rain is gone.  It’s gonna be a bright, bright sunshiny day! Now that you have that classic Johnny Nash song stuck in your head I made a lunch about it!

From the top left are black seedless grapes and watermelon suns.  At the top right is barley, white beans and carrot pennies from dinner the night before.  In the bottom compartment is a smiley sunshine sandwich on Rudi’s Honey Wheat bread.  Above the sun are pineapple pieces with a honeydew bird.  To the right are honeydew pieces with a cantaloupe sun and the bottom right pink cup are cantaloupe pieces with a honeydew palm tree and some fun face picks for decoration.  Her lunch is packed in Easy LunchBoxes container.

For her snack, my 4 year old has a matching smiling sun d’anjou pear surrounded by dried cranberries and raisins.  In the orange blossom cup are carrot bread circles.

Little Miss 2 year old has a veterinarian visiting her class today so I made her a dog.  We actually have a long haired dachshund so this looks a lot like him, without the raisin eye and nose, of course.  I used the leftover crust for his ear.  She also has carrot bread circles in the tiny green bucket above the dog.  In the Stitch container is trail mix of mixed nuts, dried fruits and seeds.  At the top left are pineapple pieces with a watermelon sun and the top right are black seedless grapes packed in her LunchBots Uno stainless container.

And packed in his Easy LunchBoxes container are leftovers for my husband.  The last night we had barley with white beans, carrots, onions and a bit of celery seasoned with cinnamon and oranges from one of my new plant based cookbooks.  Yum!   I made a smiley face with the carrots.  At the top left are honeydew and cantaloupe pieces and at the top right, a clementine.

These were fun afternoon snacks for my kids.  We live on the Gulf Coast of Florida.  I’m the big water fanatic in the family so we spend as much time as possible out walking the beach and playing outside.  We found a crab last week while walking the beach so I included him.  From the top left is a fruity drink made of watermelon and a cantaloupe strip on top with an orange slice garnish.  To the right is a beachy scene.  All the sand is cous cous with food coloring.  The crab is made of grape tomatoes, a tiny piece of uncooked pasta to attach his pinchers and 2 candy eyes.  The coconut palm is made from a pretzel stick trunk, kiwi palm fronds and dates rolled up for coconuts.  The flip flop at the bottom right is a pineapple chunk with Stretch Island brand fruit leather straps.

I also love to standup paddleboard which little Miss G did with me on Mother’s Day.  She was a bit nervous, but she ended up having a great time.  I did a scene with her half in the water hanging onto a surfboard (paddleboard) in the water which was cous cous dyed with food coloring.  The sun is a pineapple wedge.  The face and body of the girl are made from Stretch Island brand fruit leather and Vegan brand cheese.  Miss G knows that sharks live in salty water so I gave her coconut milk yogurt a water color too, and I put the fish(fruit leather) close to her & the shark far away.  At the top left is hummus with sea grass (snap peas) and an anchor.  Not shown were the quinoa chips for dipping.  Both snacks were packed in their Easy Lunch Boxes.

What better way to say you love your mother than to win a fun kitchen tool?  Or one that will help kids to make their own meals!  I was introduced to FunBites a few months back when they were kind enough to include me in doing a review for the Luv It cutter.

I must admit that the first time I got the FunBites Luv It cutter, I played with it for a few minutes.  Then my creative brain took over.  My kids didn’t need any time to decide to play.  They still think it’s a fun toy.  Luckily, it is also seriously durable and washes clean quickly.  I am not afraid to let them have the FunBites cutters to experiment.  Yes, it’s been chucked across the table, accidentally dropped and well used by my 2 and 4 year old, and both cutters still look like new.  NOT that I recommend trying it, but with toddlers anything can happen.  The best part is that once you show them, even the littlest kids can use it to help make their own snacks.  Mine LOVE creating shapes and playing with the pieces of bread, fruit, pitas or anything cut out of these fun food cutters.

FunBites Kite Lunch

For Mother’s Day, I thought it would be great to think of all the things we do.   Without mom’s a house is just a house, but with love and care it becomes the place your heart and home are.  The cantaloupe at the top left was cut with the Cube It FunBites cutter.  At the top right is guacamole in the yellow flower cup.  In the green clover cup are small, square tortilla chips I made with the Cube It FunBites cutter (see how below!)  The sandwich is Justin’s almond butter & strawberry jam on Ezekiel bread all cut with the FunBites Luv It cutter shapes.  The sun’s rays are soy cheese cut with the same cutter, and the hearts are fruit leather cut from the FunBites Luv It cutter too.

So for the homemade tortilla chips, I cut a whole grain tortilla (also pita bread or flatbread is easy for these too) with the Cube It FunBites cutter.  I placed them on a cookie sheet lined with parchment paper.  Then I lightly misted grapeseed oil (or any oil, just go easy with it) over the pieces and lightly sprinkled garlic powder over them.  I placed them in the oven on my low broiler setting and placed in the middle of the oven.  As long as you’re watching them, you can do this at 300-350 too.  They take about 5-7 minutes depending on your oven.  Again, just make sure to watch them.  Because they’re small pieces, they brown quickly.  My kids like the garlic chips with guacamole and hummus.  You can do the same thing and use cinnamon instead of the garlic powder.

Miss G wanted to learn about what state we live in so she got a new 50 states map puzzle for her birthday.  Since it’s still “S” week at school, I decided to make her a Sarasota, Florida lunch.  I rolled out whole grain bread with a rolling pin & hand cut the Florida shapes.  Inside is almond butter, agave nectar and sliced strawberries.  I decided to just make a small fruit leather star to show her “You are here.” in Sarasota.  For fun I added dried cherries in an orange blossom cup for the state flower some watermelon chunks in a pretty cup and on top are flamingo picks of edamame and carrot suns on top.  She’s also having a dapple dandy plum half at the bottom right with a strawberry heart on top.

Little sister got a space themed lunch today with a space shuttle and an S sandwich with the same whole grain bread, almond butter, agave nectar and sliced strawberries. The sandwich is surrounded by watermelon shuttles, a watermelon star and dried apricot crescent moon and a star.  In the pink sheep are dried cherries topped with a watermelon sun & stars and on the bottom left are watermelon chunks topped with a space shuttle strawberry and shuttle picks with edamame on them.  Both girls had ice water in their CamelBak kids bottles.

I was a bit apple happy this morning so Miss G got an apple shaped sandwich on whole wheat with peanut butter, jelly & honey.  I put some green sprinkles on the leaf part of the sandwich.  This picture isn’t the greatest 🙂  The strawberries are all cut into small apples.  I used a small tulip cutter to make mozzarella string cheese flowers & put them on picks with leaves.  I halved an apple after using the same large apple cutter.  Then soak the apple in some kind of citrus juice and water to prevent browning.  Little G loves lemon juice so that’s what I used today.  I also used some cute separators to keep the sandwich from getting soggy.

Just including another awful picture so you can see that I included some leftover Annie’s mac & cheese and carrots cut like suns.  Underneath them I spread ranch dip.

Little A joined her sister for the morning at school again today.  She got two little elephant sandwiches, cashews for nibbling along with a couple of pecans, sun shaped strawberries and a mozzarella cheese stick cut for grass underneath.  In the small round bento, she also got leftover Annie’s mac & cheese with a cut up a Dominex brand vegetarian eggplant meatball which she loves.  Both kids drink ice water and get a pouch of Lifeway Kefir in their lunches.
