Christmas snack box by bentorifficMiss G (4) has an Easy Lunchboxes container full of goodies today.  Her entree is separate.   We are loving the mini Crimson Gold organic apples this year.  They’re a bit tart and quite crunchy.  Best of all they are preschooler sized and fit into any lunchbox.  Nothing goes to waste since even a 2 year old can finish one of these.  I made gingerbread men and Christmas tree pumpkin muffins this week. In the top is a Christmas tree pumpkin muffin I made in a smaller silicone muffin tray.   The gingerbread men came out without limbs (can’t say I recommend the silicone mold on those).  They were all delicious but not too pretty for pictures.  In the bottom compartment are a peeled clementine orange, grape tomatoes with a candy cane food pick, mini carrots and a mixture of cashews, almonds and pistachios for munching.

LunchBots Insulated Chili by bentorifficThis LunchBots Insulated stainless container is filled with homemade vegan chili for Miss G’s main dish for lunch today. The recipe for the chili can be found here and modified depending on how you like it.  Vegan Chili Recipe  I fill the container with boiling water and let it sit for about 10 minutes with the lid on.  I heat the chili during that time, dump the water after 10 minutes and fill the container with chili.  She says it’s still warm at lunchtime 5 hours after packing it.  The best part about these containers is the wide mouth opening.  She can eat out of it just like a bowl without fumbling to get to the bottom or dumping things over.

Snowman LunchBots Quad by bentorifficMy 2 year old daughter took a LunchBots Quad  for lunch today.  From the top left she has a dairy free pumpkin muffin in a Christmas tree shape, a peeled clementine with snowman ring, small mini snowmen sandwiches on Rudi’s organic whole wheat bread made with a small pastry cookie cutter stamp, and pineapple pieces.  Both girls always have ice water with their lunches.

Miss G wanted to learn about what state we live in so she got a new 50 states map puzzle for her birthday.  Since it’s still “S” week at school, I decided to make her a Sarasota, Florida lunch.  I rolled out whole grain bread with a rolling pin & hand cut the Florida shapes.  Inside is almond butter, agave nectar and sliced strawberries.  I decided to just make a small fruit leather star to show her “You are here.” in Sarasota.  For fun I added dried cherries in an orange blossom cup for the state flower some watermelon chunks in a pretty cup and on top are flamingo picks of edamame and carrot suns on top.  She’s also having a dapple dandy plum half at the bottom right with a strawberry heart on top.

Little sister got a space themed lunch today with a space shuttle and an S sandwich with the same whole grain bread, almond butter, agave nectar and sliced strawberries. The sandwich is surrounded by watermelon shuttles, a watermelon star and dried apricot crescent moon and a star.  In the pink sheep are dried cherries topped with a watermelon sun & stars and on the bottom left are watermelon chunks topped with a space shuttle strawberry and shuttle picks with edamame on them.  Both girls had ice water in their CamelBak kids bottles.

My big shout out this week goes to my kids’ teachers.   I love my kids.  They’re wild, fun and ran like a pack of small, cute wild animals last week while they were out of school.  I am hoping that the teachers got a bit of a break because today it’s back to school for them.

My husband got a big spinach salad today with snow peas, carrots, tomatoes, and scallions.  In the small striped containers are his ginger dressing.  He also has green grapes and leftover Hoppin’ John (black eyed peas and rice) salad with tomatoes, scallions, italian parsley and celery seasoned with salt, lemon juice and garlic packed in his Easy Lunch Box.

Miss G has a seascape today.  Now that we’re back to school it’s “S” week.  The water is blue colored barley.  The starfish is an almond butter and jam on whole wheat pita, the sun is a yellow tomato, the waves and whale are made from Veggy brand soy “cheese” and the whale’s eye is a piece of quinoa.  The top right are watermelon stars and on the bottom right are green grapes and a plum octopus with Veggy cheese eyes and mouth all packed in her Easy Lunch Box.

In keeping with the “S” theme again today for little A, she has a whole wheat pita STOP sign sandwich.  On the right are green grapes with a plum and watermelon heart on top and on the bottom right is a peeled clementine packed in her LunchBots Duo.  Both girls have ice water with their lunches.

Today is Miss G’s 4th birthday.  She wanted a princess party at home tonight with a cake and a chocolate sandwich for dinner.  Not sure I’ll meet all those requests, but there will be some princess decor and a cake 🙂  Can hardly believe how the time flies.  My body and my life will never be the same!  Happy birthday, little princess.

Breakfast was homemade vegan apple cinnamon mini muffins, 4 clementine segments and a big mango 4 for Miss G.

Miss G gets a birthday cake sandwich thanks to my lazy mom’s way out (which I highly recommend!) LunchPunch cutters.  This one is from the sweet treats set of 4.  The cutter has 3 candles so I had to add one more with some Veggy brand “cheese” slices.  She wanted chocolate and peanut butter so she got a Nutella and PB on whole grain.  The pink sprinkles are stuck on with agave nectar.   She also had 4 mango crowns, 4 blackberries, 4 blueberries, 4 green grapes and 4 strawberries cut out with my FunBites Luv It! cutter and a crown pick.  At the top left is cinnamon applesauce with sprinkles in the shape of a 4.

Still spring break here so lunches are at home every day. Miss G insisted on helping me with lunch today. I promised her that I’d let her help me more often so she chose the cutters to use and wanted to make lunch for her sister too. Here she is learning how to cut the shapes out of the bread.

She wanted the cute animal faces on her sandwiches so we stamped those on there too. She had peanut butter & agave nectar sandwiches on whole grain bread. A pick of seedless green grapes and below that watermelon squares and 2 halves of a black plum. In the middle is a strawberry. She ate the entire thing because she was SO proud that she made it.

Then next she was on to little A’s lunch. She made her a small car, a star and a shell shaped sandwich that looked more like a small tree when it was done. She also made her a bowl of grapes and car & shell shaped watermelon pieces. Even little A ate almost all her lunch today.

It’s spring break week here in Florida so the girls are eating at home.  It’s incredibly warm here again too so it feels like spring too.  Miss G is definitely in a girly girl phase.  Everything must be princesses, pink, flowery and fancy.  I went with butterflies for today’s theme.  In the yellow butterfly cup is leftover cannellini bruschetta with rice vinegar, fresh basil from the garden, mini heirloom and grape tomatoes from the local market mixed with salt & pepper.  It’s great on bread but awesome without it too.  At top right on the plate are heart-shaped strawberries, below that is a small black plum cut into a butterfly shape with pick antennae.  Her sandwich is a whole grain bread butterfly with almond butter and agave nectar.  On top are peeled plum slices on the wings and another slice of black plum for the body and more colored picks for antennae.

Little A had a flower themed lunch today.   Since she turned 2 it’s pretty much anyone’s guess as to whether she’ll devour the whole lunch or smile and chuck it all on the floor.  Today she went with option C which was to push the food around on her plate a bit, make a pattern in the applesauce and then proclaim that she’s “all done”.   I try.  Her sandwich is a whole grain flower with almond butter and agave with a blueberry on top and a snap pea crisp for the stem.  The yellow flower cup has cinnamon applesauce and a grape in it.  Below that are sections of black plum in a flower shape and next to that are a couple of strawberry flowers.

A few of the first things I noticed when it arrived was that it was made in the USA. Who doesn’t love supporting a business that keeps their money and employees right here at home?  The next was that it’s a fun bright color which my kids were instantly attracted to, wanted to play with and wanted to try out.  The most important thing as a mom is that the product is sturdy.  I let the 2 and 3 year old have a go at it, and I honestly don’t think they could scratch or break it if they tried.  It’s a very well-made product and washes very easily.  As a bento-making mom I also want something functional that give me options.   It also has a “popper” to pop your food out without having to poke at it and ruin the shape.   I like the fun heart shape that it makes, and I wanted to try to find other things to make from it.

For little Miss G I chose to separate the large heart, turn it upside down and make some sailboats out of it.  The boats were cut out of two pieces of whole grain bread & filling was done after the cutting with almond butter & jam.  I cut a piece of Veggy  brand “cheese” to make the sun and fish.  The “water” is barley colored with India Tree natural food coloring.  I also used the FunBites cutter for the mango pieces in the green cup and the strawberries in the blue cup below.  Her lunch is packed in an Easy Lunch Box.

For Little Miss A I chose an ice cream cone theme.  Again, the FunBites cutter washed off quickly with little scrubbing for reuse.  Her bread was also cut from 2 pieces of whole grain bread and filled with almond butter & jam after cutting.  I used the cutter with a sweet & sara brand vegan marshmallow cut in half for the “ice cream”  and shook on some fun sprinkles. Both are topped with a fruit leather heart shaped “cherry”.  Inbetween the cones are dried apricots cut from the very same cutter.  The pink heart container has raisins in it.  At the top right is a clementine with a fruit leather heart and below are all watermelon pieces and a pineapple chunk all cut with the FunBites Luv It.  Her lunch is also packed in an Easy Lunch Box.
