For many of us it means spending time with family, a day off work and maybe a meal shared. For others it means remembering those family member and friends who were lost in combat, are still serving overseas and at home and those who sacrificed so much. For those men, women and service animals who protect and serve, have suffered injuries and gave their lives we can never thank you enough. Happy Memorial Day, everyone!

And we’re off. School’s off, it’s Memorial Day weekend, and we’re using the last day of our 3 day passes to visit DisneyLand for the day. I think I’ve mentioned before just how fortunate we are. We live near one of the top beaches in the U.S. (Siesta Key) and we’re under a 2 hour drive from the Disney gates. The girls are excited, and lunches are packed. For the sake of simplicity, I am not doing a full description of sandwiches today since we are in a rush to get going early. I just simply loaded up all 4 of our Easy Lunch Boxes with as many fruits and veggies as I could fit. We will be there all day, and the meatless and cheeseless selections at the parks are few, very far between and not so reasonably priced. We may end up getting a small snack there, but I try to prepare as many simple, healthy options for us as possible. I also pack Larabars wherever we go.
Daddy Mouse gets the bigger sandwich and I fashioned girls’ mouse face sandwiches & ears out of smaller sandwich pockets (and leftover bread for the girls. The mouse containers all have Craisins in them. I’m the one eating the kale salad with cucumbers and red carrots (mouse in the middle). Wishing everyone a safe & relaxing weekend.

So I said it would be the last lunch yesterday, but I ended up having to make one for Little A today. I remembered to pay for Miss G’s lunch, and in the rush out yesterday forgot to include her. Oops!
I also volunteered for the snack for the 2 year old room since it was a water day for them spending the morning in the hot sun. I offered for a few reasons. I really dislike the “snacks” that most other moms bring with tons of added sugar, food dyes, and the like, and I want to see all the kids refuel on the right foods. After some great suggestions from friends, I went to the fruit skewer idea. I had some issues this round though. These are 2 year olds. Not only do they put everything in their mouths, but they are also clumsy by nature. I knew I couldn’t use the sharp, wooden skewers. I poked myself plenty of times just making them so I was hoping to avoid injuries. I decided on cake pop sticks. They are the thicker, paper sticks with blunt, rounded edges like on a large lollipop. There is one big problem with those sticks and fruit. Paper and water don’t go well together. DUH! So they ended up being ok, but the sticks were wobbly by the time the kids ate them. They didn’t fall apart, but they were not ideal. Next time I will look for a different alternative. Lastly, watermelon is terrible for the skewer idea. If you’re going to use it, you’ll have to do it in large pieces or it falls apart. I also like the idea of leaving the rind on and poking the stick through it as separate snack. All in all, the kids loved them, it was a healthy snack and they looked good. They were made of cantaloupe flowers, pineapple chunks, honeydew melon stars, cherries and black seedless grapes.
Here is Miss A’s last minute lunch for her. I used the puzzle cutter by LunchPunch for the sandwich and made a piece of vegan cheese and a piece of fruit leather on top. To the right are mandarins and watermelon pieces packed in her LunchBots Duo.

Both girls wanted Hello Kitty lunches for school today. This will officially be their last bento lunch of this school year since tomorrow is a water day with lunch in the the classroom. You never know how much you appreciate all that teachers do until you have your kids at home for a week straight with no curriculum planned! Thank you to each and every teacher, aide and friend who touches my kids’ lives. You are truly a gift!
Miss A has Hello Kitty face on Rudi’s whole grain bread. The face, bow & whiskers are cut from Vegan brand cheese. To the left are raspberries with a blueberry in the middle. At the bottom left are watermelon pieces and at the bottom right is a giant strawberry heart with Hello Kitty picks of edamame on either side packed in her pink Sanrio brand Hello Kitty bento box.
Miss G has the same Hello Kitty face sandwich with a fruit leather face, bow & whiskers. Above the sandwich are two Hello Kitty picks of edamame. To the right of the sandwich is a giant strawberry heart and a Hello Kitty container above that with dried cranberries and cashews inside. In the purple flower cup are raspberries with a Hello Kitty pick and at the top right are watermelon pieces in Hello Kitty’s face shapes. The top piece has a bow pick and black sesame seeds for eyes and a nose. Her lunch is packed in an Easy Lunch Box.

I may have created a lunch monster. For the first time ever, Miss A (2) asked for a specific lunch for tomorrow. She said she wanted a seahorse. I did one last year for Miss G, but I’m quite sure neither one of them remember it. Here was last year’s:
A few fun seahorse facts.
*It is the male seahorse who is impregnated, gestates and gives birth to the babies in their species.
*Seahorses are terrible swimmers. The do have fins to propel themselves but spend a lot of time drifting and resting in one place
*Seahorses, like many species, are vulnerable to extinction. Please don’t buy the dried souvenirs that you see in shell shops or purchase ones for your aquarium. They are best left along in the wild.
Today used the same cookie cutter for this one too for the sake of ease. I used Vegan brand mozzarella cheese for the markings and a Wilton food marker to color the blue. She has a cup of shrimp and shell shaped watermelon pieces. Below that is a cup of thinly sliced strawberries and a piece of baran for sea grass below packed in her LunchBots stainless bento container.
Miss G and I were reading a book before bed, and she saw a piece of swiss cheese. She decided she would like that as her sandwich for today along with a little mouse too. The sandwich is made from the same Rudi’s Whole Grain bread. I used my small circle cutters to make the impressions in the bread without pushing it all the way through and then smooshed the middle for the indentations. The strawberry mouse is just hulled. I used Vegan brand cheese to hand cut a tail and I used tiny cutters for the face and ears. Under the sandwich is a pick of blueberries. In the top right compartment are grapes and a piece of watermelon. Below that is a flower cup of So Delicious brand strawberry flavored coconut milk yogurt with a strawberry flower on top.
