We’ve been hunkered down all weekend and part of this week just trying to stay safe and dry form Tropical Storm Debby.    We’ve had torrential downpours, flooding and 60 MPH gusts of wind.  The girls wanted to watch Despicable Me while snuggling so I made a lunch to match.

The sandwich is Gru the so called villain of the movie.  He’s made of Rudi’s Nut & Oat bread.  His nose is the bread crust, his teeth are vegan cheese, his eyes are Florida grown lychee halves and the pupils and eyebrows are made from plums.  The stars and rocket are homemade biscuits from the weekend.  I made the minions from pineapple chunks and fruit leather for the goggles and eyes.

Our storm lunch is a lightning bolt made from the same Rudi’s bread.  Above it are more of our homemade crackers shaped like clouds and an umbrella.  In the yellow flower cup are plum sections with an umbrella pick.  Below in the oval cup are red seedless grapes.

And the sides for my husband today are a salad made from baby kale, spinach and arugula.  At the top right is edamame succotash with edamame, corn, tomatoes, white wine, garlic, parsley, basil, jalapeno peppers,  and pepper.  At the top left are lychee fruit unpeeled all packed in his Easy Lunch Box.

These were fun afternoon snacks for my kids.  We live on the Gulf Coast of Florida.  I’m the big water fanatic in the family so we spend as much time as possible out walking the beach and playing outside.  We found a crab last week while walking the beach so I included him.  From the top left is a fruity drink made of watermelon and a cantaloupe strip on top with an orange slice garnish.  To the right is a beachy scene.  All the sand is cous cous with food coloring.  The crab is made of grape tomatoes, a tiny piece of uncooked pasta to attach his pinchers and 2 candy eyes.  The coconut palm is made from a pretzel stick trunk, kiwi palm fronds and dates rolled up for coconuts.  The flip flop at the bottom right is a pineapple chunk with Stretch Island brand fruit leather straps.

I also love to standup paddleboard which little Miss G did with me on Mother’s Day.  She was a bit nervous, but she ended up having a great time.  I did a scene with her half in the water hanging onto a surfboard (paddleboard) in the water which was cous cous dyed with food coloring.  The sun is a pineapple wedge.  The face and body of the girl are made from Stretch Island brand fruit leather and Vegan brand cheese.  Miss G knows that sharks live in salty water so I gave her coconut milk yogurt a water color too, and I put the fish(fruit leather) close to her & the shark far away.  At the top left is hummus with sea grass (snap peas) and an anchor.  Not shown were the quinoa chips for dipping.  Both snacks were packed in their Easy Lunch Boxes.

I’m not sure if my girls have seen Fantasia, but that would be the closest exposure they’ve had to a wizard. Today Miss G gets a wizard sandwich with vegan cheese stars and a crescent moon on his hat. He has candy eyes, a dried cherry piece for a nose and Daiya vegan shredded cheese for his beard. His wand is a pretzel stick with a strawberry star at the top. At the top right are watermelon stars and the bottom right are crescent sliced peaches packed in an Easy Lunchbox.

Little Miss A has some bad weather for lunch. Because it’s W week they are talking about different types of weather. I made her a cumulonimbus cloud with lightning bolts coming out of the bottom. She also has some Veggy vegan cheese smaller clouds above the sandwich, and at the bottom right of the sandwich are Snyder’s pretzel snaps. At the top right are frozen guacamole pinwheels and at the bottom right are strawberry slices with a Veggy cheese umbrella on top.

Thu hubby also gets another salad to go with his lunch. He has an all spinach salad today with cucumber slices, mini carrots and edamame sprinkled in. (Not shown is a container of ginger dressing). Last night I also made oven roasted chickpeas. They turned out pretty well although some are a bit too soft for my taste. They are like a healthier version of corn nuts if done properly. I rinsed & dried the beans, drizzled a bit of olive oil, placed them on a cookie sheet lined with parchment paper & baked at 350 degrees for about 40 minutes. Then I used sea salt & garlic powder to season once they were done (shown at top right). On the bottom right are mini grape & plum tomatoes from our plants out back. All 3 lunches today are packed in Easy Lunch Boxes.

It’s still rainbow week.  I’m working with what I’ve got in the fridge instead of picking up a bunch of vegetables & fruits this week that we can’t finish.  So for the sake of practicality, I am using what I’ve got with some fun colored plastic cups my friend sent me for the girls.  They’re actually shot glasses.  You know the party life of parents with a 2 & 4 year old!  Whoot!  Early to bed, early to rise for us here.

Miss G wanted her Unicorn. I decided not to doll it up with a bunch of sugar today to keep it healthy.  Under the unicorn are spinach leaves.  Above the unicorn from left to right are strawberries, honeydew and pummelo, which is a ginormous grapefruit looking fruit.  It was larger than Miss G’s head, about 9″ across.  I like them because they aren’t quite as juicy so they pack well, and they’re not as tart either so the kids eat them up.  At the top left are mango chunks and at the top right is cannellini bean bruschetta leftover from dinner.  It has cannellini beans rinsed & drained, 5 leaves of fresh basil, an orange tomato, sea salt, pepper and red wine vinegar in it.  Yum!

Miss A has an umbrella with tiny vegan cheese umbrellas on top today.  Starting at the top left corner near the umbrella are honeydew pieces, top right are cannellini beans, bottom right are red carrot slices and at the bottom left are pummelo pieces.  At the top left of her lunchbox is a mandarin orange peeled with a yellow drink umbrella hat, and in the red heart are 2 sliced strawberries.  Both girls’ lunches are packed in their Easy Lunch Boxes today.

It’s still “Q” week at school so she chose the quacking quackeroo from the Dr. Seuss ABC book.  I hand carved a gardein brand  “chicken” breast for the bird which was leftover from dinner last night.  I hand cut and carved the carrots out of organic mini carrots and also a bit for the tongue.  His eyes are small pieces of fruit leather.  The marshmallow fuzzy collar is made from vegan marshmallows by sweet & sara.

The Q above the quackeroo is made with whole grain bread, and the orange star shaped silicone cup is filled with edamame.  On the top right are watermelon stars and underneath that are pieces of blood orange.  Below that in the purple cup are green tea rice noodles with carrot stars on top.

Little Miss A’s very favorite Seuss story is “Cat in the Hat” or cat hat as she calls it.  I rolled out whole grain bread with a rolling pin which makes it much easier to cut and cut out Cat in the Hat.  His bowtie and facial features are all fruit leather.  His hat is strawberry and banana slices, and the umbrella is the kind you find in fruity drinks here in Florida!  The sandwich has Smart Deli “turkey” and Veggy “cheese” inside.  In the top right red cup is the same green tea pasta with watermelon fish, and below in the blue cup are edamame and a cucumber pinwheel.  Both girls’ lunches are packed in Easy Lunch Boxes.

Things I used to make this lunch:

Well, it’s sort of overcast anyway.  This bento was sent to me from a friend who found it on http://www.cutefoodforkids.com.  So this is my version for Miss G today.  The smiling cloud is handcut from an apple with royal icing eyes and a dried apricot mouth.  Underneath are raspberries and below the cloud is a sliced pluot (plum/apricot hybrid).  On the right side is a PB & J umbrella with fruit leather & sprinkles on top.  Below are Choco Boy biscuits for a treat.  Lots of sugar in this one.  She also had an applesauce and kefir for lunch.

Little A went to school for a half day today too.  She doesn’t care much for sandwiches so I gave her left over tortellini cut into pieces on the right side of the heart.  The left side is leftover corn off the cob and a BabyBel cheese on top.  The blue square is full of grapes, watermelon, blueberries and pinepple bits.  I use WasteNot Saks which I bought on http://www.etsy.com instead of ziploc bags and put her green bean crisps in there.  She also had an applesauce and a kefir today.

The girls won’t be in school tomorrow so no fancy lunches from me.  Wishing everyone a relaxing, safe Labor Day weekend!
