For last night’s dinner we had quinoa pasta.  I love that I can find healthy, fun pasta for my kids in great shapes.  The Quinoa Corporation makes these garden pagodas that I cooked with Lightlife brand vegan italian sausages and marinara sauce and grape tomatoes.  The thing I really like about the quinoa pasta is that it’s organic, non-GMO (not genetically modified), gluten-free and use plant based colors.  Better than that they don’t get mushy and my kids love them.  I decorated with vegan (non-dairy) cheese butterflies. At the bottom are two small apple slices with a butterfly and a G for Miss G with the opposite color plugged into the cutout packed in her Goodbyn bynto lunchbox.

For her snack today, Miss G has black seedless grapes, honeydew melon and the red butterfly cutout from her apple in the middle packed in her Happy Tiffin stainless bento box.

Little Miss 2 year old has the mini version of the same lunch of quinoa garden pagoda pasta, vegan italian sausage pieces, vegan cheese butterflies and a yellow flower cup of red and green apple butterfly pieces with raspberries at the top packed in her LunchBots Duo.

My husband’s lunch is the third more adult version with vegan cheese hearts, a plum at the top left and a d’anjou pear sliced at the top right packed in his Easy LunchBoxes container.

We were invited to a small pool get together late this afternoon.  I knew the girls would be hungry.  Since we’re trying to keep to our plant-based diet, it’s easier sometimes to travel with food.   I packed both of them snacky type dinners in their Easy Lunch Boxes to go.

Miss A has Tofurkey deli sliced flower and Vegan brand cheese flowers to snack on.  The snake picks on either side are blueberries, and below is a sliced strawberry.   At the top left is hummus and the top right are honeydew melon flowers.  Not shown are whole grain pretzels for dipping in the hummus.

Miss G’s snack box is similar.  She also has Tofurkey deli slices and Vegan brand cheese in tree shaped bites. Below the small bites are black plum slices.  At the top left is hummus and the top right are honeydew melon trees packed in her Easy Lunch Box.

I loved some of the suggestions I got from the giveaway comments so I’m putting many of them into action in the upcoming weeks.  One of the comments from Mandie was that she wanted to see superhero lunches.   My kids are so young the have few superheros that they actually know yet, but I decided that they’d probably love the lunches anyway.

Miss A gets the Batman lunch.   She has an almond butter and jam sandwich on Rudi’s Whole Grain bread.  Batman’s mask and bat are made from Stretch Island brand grape fruit leather, and his eyes are vegan cheese. The bat picks surrounding the sandwich are sliced green grapes and blueberries.  She has honeydew melon bats. and dried cranberries and raspberries at the top.

Miss G has the Spiderman lunch today.  I used a spiderweb cookie cutter and made the web strings from Stretch Island Fruit leather.  Spidey’s eyes are made from vegan cheese.  The spider picks on the sides are tiny organic grape tomatoes.  She also has Spidey eye shaped honeydew melon pieces are at the top right with the spider and at the left are raspberries with a vegan cheese star on top.  Both lunches are packed in Easy Lunch Boxes.

Bentoriffic One Year Giveaway

I have a lot going on this week.  It’s the first week my kids are off school, it is my 1 year bloggiversary on June 2nd, and my sister is having her 1st baby today!   She’s not here yet, but I know she’s a lucky and beautiful girl already.  Welcome to the world, precious girl!

Since we’re my 1 year anniversary as a blog, I want to thank my friends and fans for all their support.  I love you toast with fresh fruit for breakfast anyone?  The small heart flowers are cantaloupe and watermelon.   The heart in the middle of the toast is fruit leather.  I used both the FunBites Luv It and Cube It cutters for the meal below.

And a baby carriage sandwich today with a baby panda to celebrate my sister and her husband’s new arrival today!  A sandwich made from both the FunBites Luv It and Cube It cutters.  At the top left are pineapple and cantaloupe cubes and at the top right are pear cubes both cut with the Cube It FunBites cutter.  The baby carriage sandwich is an almond butter and jam on whole grain bread cut from the FunBites Luv It cutter .  The small hearts at the top are dried apricots.  The baby lunch is also packed in an Easy Lunch Box.

The girls want to have a picnic at the park.  What?  An excuse to pack a bento lunch?  Why yes!  Let’s do it!  I let them choose their own cookie cutters today.

Miss A chose a mushroom sandwich.  I gave her an almond butter & jam sandwich.  On top are vegan cheese dots and face.  The grass below is honeydew melon and to the right is a chopped date roll coated in coconut.  At the top left are kiwi slices with a ladybug pick and at the top right are blueberries with a mushroom pick.  The mushroom container has dried cranberries.

Miss G chose a giraffe for her lunch. The giraffe’s spots are vegan cheese too.  Next to him are baby broccoli trees.  At the top left are mini carrots and at the top right are small yellow and green tomatoes we got from King Family Farm and Market the other day with a giraffe pick.  Both girls’ lunches are packed in our Easy Lunch Boxes for our park picnic.

Both girls wanted Hello Kitty lunches for school today.  This will officially be their last bento lunch of this school year since tomorrow is a water day with lunch in the the classroom.  You never know how much you appreciate all that teachers do until you have your kids at home for a week straight with no curriculum planned!  Thank you to each and every teacher, aide and friend who touches my kids’ lives.  You are truly a gift!

Miss A has Hello Kitty face on Rudi’s whole grain bread.  The face, bow & whiskers are cut from Vegan brand cheese.  To the left are raspberries with a blueberry in the middle.  At the bottom left are watermelon pieces and at the bottom right is a giant strawberry heart with Hello Kitty picks of edamame on either side packed in her pink Sanrio brand Hello Kitty bento box.

Miss G has the same Hello Kitty face sandwich with a fruit leather face, bow & whiskers.  Above the sandwich are two Hello Kitty picks of edamame.  To the right of the sandwich is a giant strawberry heart and a Hello Kitty container above that with dried cranberries and cashews inside.  In the purple flower cup are raspberries with a Hello Kitty pick and at the top right are watermelon pieces in Hello Kitty’s face shapes.  The top piece has a bow pick and black sesame seeds for eyes and a nose.  Her lunch is packed in an Easy Lunch Box.

Today’s W lunches are a witch and a watering can.  I offered a few other options, and Miss G came up with watering can on her own.  I had to cut both sandwiches by hand since I don’t have any cookie cutters that fit the bill.

The watering can is made with Rudi’s Whole Grain bread.  I microwaved each piece for 10 seconds and then use a rolling pin to flatten them before cutting.  I do like to garden, and Miss G loves to help too.  The holes in the spout are black sesame seeds.  At the bottom are tulip carrots with leaf picks at the bottom.  In the tiny butterfly container are dried cherries with a carrot butterfly on top.  In the small cup at top left are honeydew melon butterflies and carrot butterflies.   In the larger cup at the top right are strawberry hearts with a carrot butterfly on top.

Miss A has a friendly witch.   Her face and eyes are made of vegan cheese,her pupils and mouth are fruit leather as are the bands on the hat & broom.  Her broom handle is the bread crust and the broom bristles are the heel of the bread.  I wasn’t thrilled about the way her face turned out.  She looks like she could use some sun, but I didn’t have time to alter it.  She is flying across a leftover corn off the cob crescent moon.  The honeydew melon shapes at the top right are a witch’s hat, stars and crescent moons.  In the other cup are strawberry hearts and blueberries.  Both lunches are packed in Easy Lunch Boxes.
