My dad died last week.  Just as I was typing away about the things I was grateful for last week, I realize now that the small things, tiny things we think are so insignificant can sometimes be the most precious memories.  My dad was a gifted writer and storyteller.  He loved to write and shared that love with me.  My dad read my blog.  I think he appreciated that I was using my writing and creativity, making a hobby out of it and feeding my kids healthy food. I live 3400 miles from my family so I was not there for this holiday.  All my siblings were fortunate enough to be there.  He had been ill for a while, but it doesn’t make his passing any easier.   I did have the chance to talk to him to say hi, catch up for a minute and to tell him I loved him the day he died.  And for that I am truly grateful.  The conversation was nothing significant, but it is one I will always remember since it was our last.  Today, more than most, I am grateful for the time I had with my dad.  Life is fragile and fleeting so be sure to stop and appreciate all the gifts in your life, no matter how small they seem.

My 4 year old daughter had an Easy LunchBoxes container filled with angels.  From the top left are pear pieces and angel shaped pears.  In the top right compartment are honeydew angels.  And in the main compartment are carrots, farfalle pasta with vegan parmesan sprinkled on top, grape tomatoes on wing bento picks and a spinach angel on top.  In the bottom right corner is a Crimson Gold apple surrounded by purple sweet potato chips and in the bottom left corner are Field Grain veggie sausages with wing food picks.

For her snack today, Miss G has a Happy Tiffin brand stainless bento box filled with dried cranberries, medjool dates, sliced kiwi, and apple angel and whole cashews.

Miss 2 year old is back to school this week to with a LunchBots Quad stainless container.  From the top left she has dried cranberries, cashews, farfalle pasta with small Field grain Italian veggie sausage pieces and a slice of Field Grain sundried tomato angel on top.  In the bottom right compartment are pear angels and in the bottom left are honeydew angels.

I packed my husband his daily fruits and vegetables in his Easy LunchBoxes container to go with his leftovers for lunch (not shown).  He has raw walnuts, the negative cutout angel pieces of honeydew melon, mini carrots, medjool dates, an apple and a clementine.

Welcome to Monday.  I’m off to a slow start today trying to tackle a big to-do list, and I’m late posting lunches!  Hope everyone enjoyed their weekend.  Miss G was the only one in school last Friday so I’m posting her Friday lunch.

She had Soy Boy ravioli at the top left.  I sent vegan parmesan “cheese” not shown for her to sprinkle on her pasta.  At the top right are cantaloupe pieces with a jack-o-lantern pick in them.  And in the bottom container are sliced strawberries and grape tomatoes.

For her snacks Friday, she had black seedless grapes at the top and a develish clementine with horns.  At the bottom is a half of a grim reaper green apple surrounded by cashews, walnuts and raisins.

Hot!  That’s what fall is like in Florida.  While everyone else gets cool evenings and crunchy fall leaves with gorgeous color, we’re still sweating and pretending it’s summer.  I remember the good old days when October meant snow in Minnesota where I grew up.  My kids don’t know any better so I made some Florida fall bento lunches.

Packed in her sistema brand lunchbox, my 4 year old has kiwi slices with a clementine peel squirrel on top, mini acorn sandwiches, black seedless grapes and orange cantaloupe leaves.

For her snacks today, Miss G has grape tomatoes with mini carrots and in a smaller container she has trail mix with cashews, walnuts, almonds, pumpkin seeds, and dried fruit.

I like to change things up between kids so my 2 year old is having the same trail mix with a squirrel cutout for decoration.  She also has acorn and pumpkin sandwiches, honeydew leaves and cantaloupe acorns packed in her LunchBots Quad stainless container.

And for the other snack I packed a fall themed squirrel bento with strawberries, plums (underneath) and a peeled clementine orange in the middle.

We’re back from a fun, long weekend away.  I hope everyone had a relaxing weekend and a safe 4th!  I can’t say I planned well for lunches today since I was feeling especially sleepy this morning.  The girls are off to a week of summer camp at their regular school, and the adults are back to the grind.

I got a new bear face sandwich cutter.  To be honest it was not what I expected.  Maybe that is because I haven’t learned how to use it properly yet (instructions in Japanese), and maybe I should have planned ahead.  In any case, Miss G gets to be the guinea pig on this one.  Whole grain bread, although it is the best FOR you does NOT make the best shapes and mold well in presses.  What I got was a bear with a bit of a skull fracture.  Oops!  It’s definitely not the prettiest lunch I’ve ever made, but I believe it’s important to show you that nothing’s ever perfect.  My daughter will still think it’s fun and like it even if his face is falling apart.  To salvage his face I stuck raisins in his eyes, almonds in his ears, a prune (which she really does love and eat) and dried goji berries in for the mouth.  The goji berries are a newer food to my girls.  I don’t expect them to eat it all, but they must TRY them.  The bread is Rudi’s brand Nut & Oat bread filled with almond butter & strawberry jam.  Above the bear at the top left are mini carrots & dip in the bear container.  At the top right are bear shaped watermelon pieces packed in her Easy Lunch Boxes container.

Miss A gets a simplified version with little bear sandwiches today.  She doesn’t do well with the bigger sandwiches so I made her 3 little bears.  Hers are also almond butter and jam on whole grain bread.  With the sandwiches are organic raspberries, a bear pick and bear baran (food separators) just for fun decoration.  On the left side of the bento box are mini carrots, bear shaped watermelon pieces and pineapple chunks with more fun bear picks.

My husband gets a baby spinach salad made into a funky food face.  Broccoli sprouts make up the hair, cherry tomatoes for the eyes, a sugar snap pea for the nose, a carrot for the mouth cut with a crinkle cutter and walnut ears.  I buried more walnuts and peas under the face for him to find while he’s eating.  At the top left are pineapple pieces and at the top right is leftover whole grain elbow macaroni with marinara sauce & veggy crumbles packed in his Easy Lunch Boxes container.

Things I used to make this lunch:

School’s almost over for us.  It’s hard to believe since the days drag, but the weeks fly.  This week is a continuation of Under The Sea theme.  Miss G requested a submarine.  I have to admit it would be one of the last things I ever would have come up with.  It was so creative that I agreed.

She has a Justin’s Almond Butter and jam on Rudi’s Whole Grain bread.  I used a rolling pin to flatten the bread before hand cutting the submarine.  It has fruit leather portholes.  She has a date whale with coconut flakes on top next to the boat.  At the top left are mango slices with a blowfish pick and at the top right are watermelon slices with a small sea turtle pick.

I didn’t feel like making 2 subs so Miss A got an octopus today.  Hers was cut from a biscuit cutter and then I used the biscuit cutter to cut “legs” out of the remaining bread.  His hat is a date roll with coconut flakes shaped into a hat.  The eyes are candy eyes stuck on with almond butter and so is the fruit leather mouth. At the top left is a mandarin orange with a dolphin pick, at top right are watermelon pieces with an octopus baran (food separator), and in the yellow oval are mango pieces with an octopus pick.

My husband has a salad & sides to go with his lunch today.  His salad is organic romaine lettuce,with a locally grown, sliced tomato courtesy of my generous neighbor (Thank you!), unsalted, raw walnuts, mini carrots and cauliflower.  At the top left are dried apricots and a date roll with coconut flakes and at the top right are watermelon slices.  All 3 lunches today are packed in Easy Lunch Boxes.

The week before Easter is fun for me because I love building up the excitement for my girls.  How many more “sleeps” until the Bunny comes?  My kids, like most, adore little animals.  They recently got their spring pictures taken with some little baby chicks.  Miss G was VERY into mothering them and holding them while little A just stared at them.  She wasn’t sure whether or not they were scary, and every time these 3″ high chicks walked towards her she would shriek.   These chicks are the best kind.  Nothing to clean up!

Miss G has watermelon flowers at the top left with a chick pick, at the top right are blueberries and a strawberry butterfly with a duckling pick.  The chick sandwich is on Rudi’s Nut & Oat bread with almond butter & jam.  On top are slices of mozzarella and cheddar Vegan brand cheese, a candy eye and a carrot beak.   In the yellow chick cup are edamame and carrot butterflies on top, and in the Easter egg are cashews packed in an Easy Lunch Box.

Little Miss A has a duckling today with the same sandwich and Vegan soy cheese on top wearing a hat pick.  The beak and wing are carrots and the eye is a pre-made candy eye.  At the top left are blueberries with a strawberry butterfly and a chick pick, a clementine orange is next to that, and in the yellow chick cup are edamame with a carrot butterfly on top.  Her lunch is in a Hello Kitty bento box.

I also made a salad for my husband to go with his Amy’s brand frozen rice & veggie bowl lunch.  His salad is all spinach leaves underneath topped with a quartered watermelon radish (the purple slices with the green edge).  I hadn’t ever seen one before until a few months ago.  They are pretty plain looking outside, but inside they’re amazingly pretty.  They are also much spicier (I think) than a normal radish.  I also included orange & yellow carrots from the local King Family Farms and a handful of walnuts packed in his LunchBots stainless bento.

Day 2 of the transportation theme, and Miss G wanted a train today.   She had Rudi’s Oat & Nut bread with soy butter and strawberry jam.  On top of the train I used some funky carrots that I found at the local farmer’s market.  They were orange, yellow and a dark red so I thought they would make great wheels.  I stuck them on with the soy butter.  I also wanted to make steam coming out of the top, but I think it looks more like clouds which is fine too. I stuck a blue elephant pick in the sandwich so the train would have a driver.  At the top right are honeydew, cantaloupe and a watermelon heart.  Below that is a small rail car with the same carrot wheels carrying a load of green grapes all packed in her Easy Lunch Box.

Miss A was still sniffly so she was at home with me again this morning.  Big daddy however needed lunch today.  I made him an almond butter sandwich with jam on the same Rudi’s Oat & Nut bread.  He got a big dollar sign made of Veggy Cheese on top.  He also had some left over hoppin’ john salad made of black eyed peas, collard greens, celery, green peppers, onions, and some spices. And at the top left is the same melon hearts that Miss G had in hers packed in his Easy Lunch Box.

And he also had a salad from a salad bowl I’ve been growing in the back yard.  I used the rest of the multi-colored carrots in his lunch, an orange heirloom tomato and walnuts on top packed in his Lunchbots Uno.
