It’s Meatless Monday!  I’ll post my variation of the recipe below for those interested.  Miss G has forbidden (black) rice topped with stir-fryed veggies and a small sauce container of soy.  At the top left are dried cranberries, goji berries and dried edamame.  At the top right is a pumpkin clementine all packed in her Easy LunchBoxes container.

Meatless Monday Stir Fry with rice:

Choose any kind of rice that you have handy and cook.  While rice is cooking, cut up the vegetables that you’d like in your stir fry.  I had broccoli, onions and carrots.  I saute them in water and cook until tender.  I also made a first attempt at brown sauce.  I used 1/4 cup soy sauce, 1/3 cup vegetable broth, 1/3 cup of molasses, 1 teaspoon of grated ginger and 3 teaspoons of minced garlic.  Next time I will add 1 tsp of cornstarch at a time until it thickens a bit.   This sauce is definitely something you make to suit your taste.  My kids won’t eat a lot of ginger so I minimize it.  Cook ingredients in a sauce pot over medium heat for about 5 minutes and pour over rice and veggies.  Dinner is served!

Miss G’s Happy Tiffin container is filled with plum sections and a half of an apple.  The round container is filled with peach flavored almond milk yogurt.

These were fun afternoon snacks for my kids.  We live on the Gulf Coast of Florida.  I’m the big water fanatic in the family so we spend as much time as possible out walking the beach and playing outside.  We found a crab last week while walking the beach so I included him.  From the top left is a fruity drink made of watermelon and a cantaloupe strip on top with an orange slice garnish.  To the right is a beachy scene.  All the sand is cous cous with food coloring.  The crab is made of grape tomatoes, a tiny piece of uncooked pasta to attach his pinchers and 2 candy eyes.  The coconut palm is made from a pretzel stick trunk, kiwi palm fronds and dates rolled up for coconuts.  The flip flop at the bottom right is a pineapple chunk with Stretch Island brand fruit leather straps.

I also love to standup paddleboard which little Miss G did with me on Mother’s Day.  She was a bit nervous, but she ended up having a great time.  I did a scene with her half in the water hanging onto a surfboard (paddleboard) in the water which was cous cous dyed with food coloring.  The sun is a pineapple wedge.  The face and body of the girl are made from Stretch Island brand fruit leather and Vegan brand cheese.  Miss G knows that sharks live in salty water so I gave her coconut milk yogurt a water color too, and I put the fish(fruit leather) close to her & the shark far away.  At the top left is hummus with sea grass (snap peas) and an anchor.  Not shown were the quinoa chips for dipping.  Both snacks were packed in their Easy Lunch Boxes.

Tools I used to make these lunches are:

School’s almost over for us.  It’s hard to believe since the days drag, but the weeks fly.  This week is a continuation of Under The Sea theme.  Miss G requested a submarine.  I have to admit it would be one of the last things I ever would have come up with.  It was so creative that I agreed.

She has a Justin’s Almond Butter and jam on Rudi’s Whole Grain bread.  I used a rolling pin to flatten the bread before hand cutting the submarine.  It has fruit leather portholes.  She has a date whale with coconut flakes on top next to the boat.  At the top left are mango slices with a blowfish pick and at the top right are watermelon slices with a small sea turtle pick.

I didn’t feel like making 2 subs so Miss A got an octopus today.  Hers was cut from a biscuit cutter and then I used the biscuit cutter to cut “legs” out of the remaining bread.  His hat is a date roll with coconut flakes shaped into a hat.  The eyes are candy eyes stuck on with almond butter and so is the fruit leather mouth. At the top left is a mandarin orange with a dolphin pick, at top right are watermelon pieces with an octopus baran (food separator), and in the yellow oval are mango pieces with an octopus pick.

My husband has a salad & sides to go with his lunch today.  His salad is organic romaine lettuce,with a locally grown, sliced tomato courtesy of my generous neighbor (Thank you!), unsalted, raw walnuts, mini carrots and cauliflower.  At the top left are dried apricots and a date roll with coconut flakes and at the top right are watermelon slices.  All 3 lunches today are packed in Easy Lunch Boxes.

A few of the first things I noticed when it arrived was that it was made in the USA. Who doesn’t love supporting a business that keeps their money and employees right here at home?  The next was that it’s a fun bright color which my kids were instantly attracted to, wanted to play with and wanted to try out.  The most important thing as a mom is that the product is sturdy.  I let the 2 and 3 year old have a go at it, and I honestly don’t think they could scratch or break it if they tried.  It’s a very well-made product and washes very easily.  As a bento-making mom I also want something functional that give me options.   It also has a “popper” to pop your food out without having to poke at it and ruin the shape.   I like the fun heart shape that it makes, and I wanted to try to find other things to make from it.

For little Miss G I chose to separate the large heart, turn it upside down and make some sailboats out of it.  The boats were cut out of two pieces of whole grain bread & filling was done after the cutting with almond butter & jam.  I cut a piece of Veggy  brand “cheese” to make the sun and fish.  The “water” is barley colored with India Tree natural food coloring.  I also used the FunBites cutter for the mango pieces in the green cup and the strawberries in the blue cup below.  Her lunch is packed in an Easy Lunch Box.

For Little Miss A I chose an ice cream cone theme.  Again, the FunBites cutter washed off quickly with little scrubbing for reuse.  Her bread was also cut from 2 pieces of whole grain bread and filled with almond butter & jam after cutting.  I used the cutter with a sweet & sara brand vegan marshmallow cut in half for the “ice cream”  and shook on some fun sprinkles. Both are topped with a fruit leather heart shaped “cherry”.  Inbetween the cones are dried apricots cut from the very same cutter.  The pink heart container has raisins in it.  At the top right is a clementine with a fruit leather heart and below are all watermelon pieces and a pineapple chunk all cut with the FunBites Luv It.  Her lunch is also packed in an Easy Lunch Box.

My neighbor and I decided to try to stuff all the little tummies before the candyfest this evening.  We divided up duties and made a fun and healthier feast.  Most of the kids are under 4 which makes it a little tough.   We decided on PB & Js on whole grain bread since there were no food allergies in the group. The PB & Js are the skeletons and pumpkins so the jelly would “bleed” through the eyes and mouths.   We also made owls, cats and a few brooms.  We used pre-made candy eyes and used plastic rings as decorations.

 

We also did cups with ranch dip on the bottom and carrot & celery sticks stuck in them after seeing the idea on Pinterest.

Mandarin orange cups with Sharpie marker faces on them.

Green and black seedless grapes with skeleton rings.

Also included (and not impressive) were Sabra mini hummus cups with pretzels.
