We’re packing up for a beach playdate today.  I slacked on the rainbow theme this week so I decided to do a few last themed lunches for today.  It’s already in the mid-80s here so the kids need to stay well hydrated & snacked while we’re outside.

Miss G and Miss A both get rainbow and whale sandwiches today with the same bread from earlier this week.  It was made by Astrid at Lunch Fit For A Kid and her incredible baking skills.  Click on any of her links on this page to find out how she made this beautiful Rainbow Pan de Mie.  At the top left is a slice strawberry with peach slices below it.  On the bottom left is a cup of pineapple chunks, edamame and a flamingo pick with blueberries on it.  The sandwiches are both peanut butter with blackberry jam.  The candy eye is stuck on with peanut butter so it won’t move.

Miss A had the same exact sandwiches with the Rainbow Pan de Mie bread.  At the top left, she also had a sliced strawberry, peach slices, bottom left with pineapple chunks, and honeydew melon.  Next to her sandwiches are blueberries on a flamingo pick.

I also packed rainbow assorted fruit snacks and veggies for the girls to eat & share with our friends.  Clockwise from the top left are strawberries and a mandarin orange, honeydew melon, dried apricots and dried cranberries, mini carrots, blueberries, and pineapple chunks.  All 3 rainbow lunches were packed in our Easy Lunch Boxes

My big shout out this week goes to my kids’ teachers.   I love my kids.  They’re wild, fun and ran like a pack of small, cute wild animals last week while they were out of school.  I am hoping that the teachers got a bit of a break because today it’s back to school for them.

My husband got a big spinach salad today with snow peas, carrots, tomatoes, and scallions.  In the small striped containers are his ginger dressing.  He also has green grapes and leftover Hoppin’ John (black eyed peas and rice) salad with tomatoes, scallions, italian parsley and celery seasoned with salt, lemon juice and garlic packed in his Easy Lunch Box.

Miss G has a seascape today.  Now that we’re back to school it’s “S” week.  The water is blue colored barley.  The starfish is an almond butter and jam on whole wheat pita, the sun is a yellow tomato, the waves and whale are made from Veggy brand soy “cheese” and the whale’s eye is a piece of quinoa.  The top right are watermelon stars and on the bottom right are green grapes and a plum octopus with Veggy cheese eyes and mouth all packed in her Easy Lunch Box.

In keeping with the “S” theme again today for little A, she has a whole wheat pita STOP sign sandwich.  On the right are green grapes with a plum and watermelon heart on top and on the bottom right is a peeled clementine packed in her LunchBots Duo.  Both girls have ice water with their lunches.

Oh, Monday.  Sometimes I wish I had a few extra hours on Monday mornings.  I find it tough to get moving at all much less to make lunches for everyone.  Today made a sailboat to save some time.  I just cut fruit leather to lay over the sandwich for the boat & sails.  I put blueberries for the water, cut 2 octopus and a whale out of fresh plums with the mini cutters I have from http://www.allthingsforsale.com and also the cheese fish were cut from the same mini cutters.   Not shown was applesauce and a Lifeway Kefir pouch as part of Miss G’s lunch.
