Elves and trees by bentoriffic

My 4 year old has elves watching her for lunch.  These look more like Keebler elves than Christmas elves to me, but she doesn’t know.  They are sitting on a crust of their Rudi’s Whole Grain bread.  At the top left are small carrot Christmas tree sandwiches filled with Justin’s almond butter and in the top right compartment are watermelon trees cut with a tree shaped pastry plunger that I found in a set at Target and packed in her Easy Lunchboxes container.

Miss G’s snack today was a container of Sabra hummus with dried sour cherries in the bottom, Newman’s Own pretzel sticks and cashews in the bottom.  In the top tier are dried apricots stuffed with carrot trees and surrounded by raisins.  On the right side are cantaloupe trees.

Little Miss 2 year old is back to school today with a LunchBots Quad.  From the top left are watermelon Christmas trees, raisins, cashews and carrot trees, cantaloupe holiday trees and 2 mini Santa sandwiches on Rudi’s Whole Grain bread.

If I haven’t raved about them enough, The LunchPunch makes some of the greatest sandwich cutters out there.  They are cute, they waste little bread, they’re sturdy and they save SO much time with lunches!  This one is Rudi’s Nut and Oat bread with a pumpernickel dog piece in the middle.  I used bread crust for his collar and the flowers cutouts are from the apple at the top left and a tree trunk pick.  On the dog picks on either side are green seedless grapes.  The top left is an apple tree with flower cutouts and more green grapes underneath.  At the top right are watermelon fire hydrants because we all know dogs are drawn to them!

Miss G’s snack today is sugar snap peas, grape tomatoes and mini carrots.

And Little Miss A is doing the letter C this week so the topic of the week was the circus.  From the bottom left is a round clown face sandwich.  The eyes are vegan chocolate chips, the nose is a dried apricot, the cheeks are raspberries, the mouth is Stretch Island fruit leather and the hair is Shirataki brand tofu pasta.  The hat above is watermelon and cantaloupe triangles surrounded by green grapes.  At the top right are mini carrots and a honeydew melon elephant with a pick hat. Things I used to make this lunch:

Miss G has days of the week lessons in spanish this week so I made her a Lunes lunch today.  In the top yellow flowers are raspberries with a blackberry in the middle and a sectioned plum on the right.  In the middle is her ice water and the bottom compartment are almond butter and jam sandwiches with LUNES cut out in Stretch Island fruit leather letters packed in her raspberry Goodbyn Bynto box.

For her snack today, nectarines, blueberry picks and strawberry hearts are packed in her Happy Tiffin stainless bento.

Little Miss A, 2, is having an insect filled lunch today.  They are studying bugs this week so I’m playing along.  She has Wholly Guacamole frozen in a spider cup.  The spider’s 8 eyes and mouth are made from kalamata olives.  Underneath are pretzel chips for dipping.  At the top right are organic raspberries on spider picks. Below that are strawberries and blueberries on ladybug picks.  And at the bottom left are plum sections with a bee pick packed in her LunchBots Quad.

My husband has a green salad today to go with his lunch.  He has mixed baby greens, organic green zebra stripe heirloom tomatoes, scallions and sugar snap peas.  At the top are mini carrots and strawberries packed in his Easy LunchBox container.

Live music thumping on the streets, gorgeous old architecture, cobblestone streets and lots of interesting people.  What’s not to love about New Orleans?  I spent a long weekend there for a blogging conference.  I met some wonderful people, left with many pearls or wisdom and a large to do list and had a bunch of fun too.  I thought that hurricane Isaac would be hitting my house in Florida when I got home.  Luckily all we’ve seen is a bunch of rain and now the sun peeking out.  Just hoping for my New Orleans friends that they escape the worst.  Sometimes we need a little reminder of how lucky we are to have each day, and that our true needs are few.

A rainbow lunch is what I decided on for Miss G’s school lunch today.   A rainbow after the storm.  We have a new LunchBots Quad stainless container for the new school year.  At the top left are flower sandwiches on Rudi’s Whole Grain bread, top right are mini carrots underneath sugar snap peas and yellow bell pepper strips.  At the bottom right underneath are lots of pineapple pieces, and papaya and strawberry flowers on top.  And at the bottom left are picks of blueberries and blackberries.

For her snack today she had Sabra hummus with Sesmark brand Ancient Grain crackers made of amaranth, millet, sorghum and quinoa.  She also has sugar snap peas and pistachios mixed with dried cranberries packed in her sistema brand bento.  Not shown is her Kleen Kanteen water bottle.

And I sent my husband off to work with some leftovers (not shown) and a mixed green salad with sugar snap peas and mini carrots.  At the top left are organic blueberries and at top right are organic plums and nectarines packed in his Easy LunchBox container.

Who has time to make these lunches?  If I had a nickel for every time someone said that to me, I’d have a whole lot more in savings.  The answer is anyone.  It doesn’t take as much time as you think.  Grab a mini cutter and try it!   Today I’m posting some not as pretty lunches.  They took me about 5 minutes each to make.  Still cute, still healthy and barely any time at all.

One of my favorite lunch tools is the Lunch Punch cutter sets.  They are super quick, cute and simple to make lunches.  At the top left are pluot slices and sugar snap peas.  At the top right are raspberries and a watermelon whale packed in a Lunchbots Uno.

Miss Four Year old had mini leaf and flower sandwiches are almond butter and jam with hummus and black bean crackers for dipping at the top.  Her Goodbyn Bynto lunchbox has a water bottle that fits in the middle and below that I packed sugar snap peas and watermelon pieces.

My husband had leftovers from dinner that we will definitely be making again!  I made my own version of this recipes for Six Sisters’ Stuff Spicy Rice and Bean Wraps that I found on Pinterest.  I made it vegan, and I keep out the spice at least for the ones I made for the little ones.  We added a little salsa on the adult versions at our house.

I used whole grain tortillas for the wrap.  In a bowl I mixed  1 cup of brown rice and quinoa mixed, 1 can of pinto beans (what I had in the pantry), and 1 tsp cumin.  I smeared a small bit of Tofutti brand vegan sour cream on the tortilla, then I loaded up with rice, quinoa and pinto bean mixture and added some julienned carrots and cucumbers on top.  I rolled them tightly, cut & served with sides of green and red salsa for the adults.   Dinner and leftovers for lunch too!  At the bottom I packed some sliced kiwi and cantaloupe in a LunchBots Duo.

Things I used to make this lunch:

My kids love Play Doh.  I really hate the mess it leaves.  What I DO love is the Play Doh cutters.  As a bento lunch freak, I look at everything as an idea for a lunch.  I have used Play Doh and play kitchen cutters (well washed, of course) to cut kid foods before.  I used a cookie cutter this sandwich to make the princess crown.  The sandwich is Justin’s Almond Butter & Jam on Rudi’s whole grain bread.  I also stuck a few candy hearts on the crown for the jewels with almond butter.  At the top left are kiwi flowers and the top right are watermelon shoes and magic mirrors for my little princess.

This time of year seems to drain many of us having to buy new shoes, school supplies, uniforms, tuition and just paying for growing kids in general.  Cristi from BentOnBetterLunches did a great post on how to make budget bentos.  She is a mom of 5, and has such a wonderful eye for organization, fresh ideas and keeping kids well fed.  I love that she finds use out of every day items like Play Doh cutters, paper muffin cups and rubberbands that make great bento items.  Her post here on Budget Bento by BentOnBetterLunches can help give you some creative ideas for lunches without spending a penny!  Thanks for the inspiration, Cristi.

Little Miss A, my 2 year old, is having mini square sandwiches.  She has been licking the filling off of the bigger sandwiches I made for her and leaving the bread.  When I switched to something more bite sized, she seems to pop the whole thing in her mouth.  I used the FunBites Cube It cutter to cut the bread and then filled the sandwiches.  In the middle is a silicone heart shaped container with seasoned pumpkin seeds.  The sandwiches are surrounded by dried cranberries.  At the top left are raspberries with a kiwi heart on top and at the top right are watermelon flowers.  The lunch is packed in a LunchBots Duo stainless container.

Chevrons have resurfaced in design, fashion and now I’m putting them into my food.  I love them.  The bright colored Vs in this salad are all different colored sweet peppers.  Underneath the salad is baby spinach and around the salad are cucumber flowers packed in an Easy LunchBox.  At the top left are carrot & celery sticks and at the top right are fresh nectarine slices & raspberries.

Things I used to make this lunch:

This week is jungle week at preschool summer camp for the girls.  They are obsessed with monkeys already.  I happen to think it’s because they can relate to their behavior at 2 & 4.  They’re wild, they like to run around and make tons of noise, throw things, and thank goodness they’re cute…what’s not to like?

Miss G is having a monkey face.  I used a biscuit cutter for the top part of the head and a large oval (Easter egg) cutter for the mouth portion of the sandwich and trimmed the edges a bit.  Then I used a smaller circle cutter for the ears.  It’s all made from Rudi’s Honey Wheat bread and filled with Justin’s Almond butter and strawberry jam.   I used the almond butter to stick on the fruit leather mouth, nostrils and pupils.  The eyes are Vegan brand cheese.  The face is on 2 romaine leaves and there are halved prunes underneath to prop up the ears and mouth & keep them from falling.  I also included heart shaped strawberry halves.  At the top left are plum sections with a piece of monkey baran (food separators) and at top right are watermelon squares with another monkey packed in her Easy Lunch Box container.

Little A is having a monkey swinging from a broccolini tree.  I used a cookie cutter for this one and made the face from Stretch Island fruit leather.  I also cut “bananas” from pineapple chunks.  Miss G and I have a severe banana allergy so we can’t have the real thing in the house.  I hung the bananas in the tree along with a monkey pick. Underneath the monkey are crinkle cut sugar snap peas for the jungle floor packed in her Easy Lunch Box container.

My husband’s salad is very orangey today.  Orange foods are full of the antioxidant carotenoids which help reduce inflammation, enhance the immune system and are a great source of vitamin A for things like healthy skin and vision.  He has baby bok choi and other mixed baby greens.  On top are sliced orange bell peppers, Daiya vegan cheese shreds and carmelized walnuts around the sides.  At the top left are cashews underneath dried apricots.  At the top right are watermelon squares, a heart cut out of the middle is filled with pomegranate seeds packed in his Easy Lunch Box container.

Today’s lunch was a quickie.  My kids were starving and not willing to wait for my usual lunch antics and photos before eating.  Sheesh!  After all, they are 2 & 4.  They have the patience of a gnat.  So I whipped out my latest fun tool to try out, and this is what I got.  4 hearts and a diamond sandwich pockets made from Rudi’s Whole Grain bread, Justin’s Almond Butter and jam.  The owls are “sitting” on 2 Snyder’s braided whole grain pretzel sticks.  There are 2 heart watermelon pieces and a bunch of seedless red grapes below.

My husband gets a baby green salad with swiss chard, arugula and spinach underneath.  On top are orange heirloom tomatoes slices, baby carrots, chopped celery, green onions and sugar snap peas packed in his Easy Lunch Box.  At the top left are watermelon chunks and at top right are Rainier cherries.

And we’re off.  School’s off, it’s Memorial Day weekend, and we’re using the last day of our 3 day passes to visit DisneyLand for the day.  I think I’ve mentioned before just how fortunate we are.  We live near one of the top beaches in the U.S. (Siesta Key) and we’re under a 2 hour drive from the Disney gates.  The girls are excited, and lunches are packed.  For the sake of simplicity, I am not doing a full description of sandwiches today since we are in a rush to get going early.  I just simply loaded up all 4 of our Easy Lunch Boxes with as many fruits and veggies as I could fit.  We will be there all day, and the meatless and cheeseless selections at the parks are few, very far between and not so reasonably priced.  We may end up getting a small snack there, but I try to prepare as many simple, healthy options for us as possible.  I also pack Larabars wherever we go.

Daddy Mouse gets the bigger sandwich and I fashioned girls’ mouse face sandwiches & ears out of smaller sandwich pockets (and leftover bread for the girls.  The mouse containers all have Craisins in them.  I’m the one eating the kale salad with cucumbers and red carrots (mouse in the middle).  Wishing everyone a safe & relaxing weekend.

My girls are learning about Florida today.  Miss G was asked to dress like a tourist at preschool to celebrate things about our state.   Since I recently did two lunches showing where the state is, I decided to make things that they like & see often.   The mockingbird is our state bird.  We feed the birds at our house, and a mockingbird sits atop the large oak tree in our front yard and sings most days.  It imitates the songs of many other birds so it’s pretty to listen to.  They are also fierce protectors of their nests so if we (or the dogs) get too close, they will swoop down & chirp at us to give us a warning.

The mockingbird is made from Rudi’s Whole Grain bread.  And the wings and tail feathers are the heel of the loaf.  Its eye and beak are made from fruit leather. His leg & tree branches are made from pretzel sticks and the leaves are unsalted pumpkin seeds stuck on with almond butter.  Next to the bird is a mandarin orange peeled at one end to make a sun since Florida is the Sunshine State.  At the top left in an orange cup (the orange blossom is our state flower) is a cornbread muffin and at the top right are locally grown blueberries from King Family Farm and Market and organic raspberries with an umbrella pick.  Her lunch is packed in an Easy Lunch Box.

And Miss A gets a flamingo today.  Flamingo “stuff” is sold in every tourist shop in our state.  When I first visited Florida over 20 years ago, I was shocked to not see one flamingo.   They aren’t native here, but we see plenty of them at our local attractions.  If you’re visiting here, Sarasota Jungle Gardens is a fun place to visit in Sarasota.  They have many flamingos that walk around the grounds, and the kids can hand-feed them.  They are also at the Tampa Lowry Park Zoo where we spend a lot of time.  So even if they’re not native, we do get to see them often.  It is a rare thing if we see them anywhere in the wild, and in fact they are mostly in the Florida Keys and Miami area.  Other than that you won’t really see them here if you’re here for vacation.

Miss A’s flamingo was made of the same Rudi’s Whole Grain bread.  I stuck some pink sprinkles on with agave nectar.  The state tree of Florida is the sabal palm (also known as the cabbage palm) so her palm tree trunk is made from dates and coconut flakes, and the palm fronds are honeydew melon.  At the top left are orange blossom cups with blueberries and raspberries, and at the top right is a mini cornbread muffin with a flamingo pick packed in her Easy Lunch Box.
