So maybe this isn’t the most reverent representation of the manger scene, but I was limited on time this morning. I wanted Miss G to have the manger scene for her lunch…the reason for the season. Baby Jesus is made from Stretch Island fruit leather on a bed of cashews. The angel is Justin’s Almond Butter on Rudi’s Organic brand Whole Grain bread. The star is a dried apricot and next to the angel are a Christmas tree pick of grape tomatoes. At the top left are organic blueberries with a gift food pick and in the top right compartment of her Easy Lunchboxes container are organic raspberries.
And above is the elusive mom lunch. I say this because I rarely get lunch. I’m lucky if I have a protein bar or smoothie while on the run. Today I am driving down to Miss G’s school to have lunch with her so I packed myself a cute lunch too. I’m having a gingerbread girl on Rudi’s Organic whole grain bread with almond butter & blackberry jam. I stuck some raisin buttons on with almond butter. She has cinnamon candy eyes and a fruit leather mouth. I used a Hello Kitty bow for her hair pick. She is surrounded by grape tomatoes on Christmas tree picks. In the top left compartment are pineapple chunks with a candy cane food pick and the top right has organic blueberries and raspberries. Merry Christmas to you all!
I will be taking a break to spend time with my family while the kids are out of school. Hoping everyone has some time to relax and appreciate all the little things in life. I look forward to hearing from you in the new year!

A while back I put this Santa in the chimney lunch together for FunBites. I used their CubeIt cutter and some Rudi’s Organic Whole Grain bread to make the mini sandwiches. I used the crust bread scrap for the top of the chimney and some remaining bread for his face. His eyes and nose are made with Stretch Island brand fruit leather. I used some agave nectar and sprinkled some unsweetened coconut on his face for the beard. His hat is a strawberry half and the top of his hat is a tiny piece of a vegan (dairy free) marshmallow. Above the mini sandwiches are a cup of honeydew melon trees with a Santa cupcake pick and in the top right cup are strawberry stars with a candy cane food pick.

I don’t know about everyone else, but I’m definitely in the middle of the holiday scramble of trying to pull it all together. This time of year although festive can cause a bit of stress too. Hoping that everyone is finding some joy in all the details.
My four year old has a raspberry colored Goodbyn Bynto today packed with a CuteZCute pig. I love this sandwich cutter kit for its ease of use and a TON of options. There will be a few in packages for friends and family this year from me! I used Rudi’s Whole Grain bread, Justin’s brand maple almond butter & jam. I also added some shiny sprinkles behind the eyes & snout for color. Dried apricots and a Crimson Gold organic apple surround the sandwich. In the middle compartment are mini carrots, pineapple pieces and cantaloupe chunks. And in the top are raspberries and a silicone pig cup of whole cashews on top.

For her snack today, Miss G has a LunchBots Duo packed with tomatoes, crackers and a seckel pear in the left compartment. On the right is an apple cinnamon Christmas tree muffin, an Apple Pie Larabar and dried cranberries.
Little sis has a spaceship lunch in her LunchBots Quad. From the top left are dried apricots, a Crimson Gold organic apple and a Stretch Island fruit leather crescent moon, rocket shaped cantaloupe pieces, raspberries and mini carrots and small space ship sandwiches on Rudi’s whole grain bread.

This lunch sort of reminds me of something I should do for Valentine’s day, but love for my kids is year round so I make a lot of heart themed lunches. This one is Rudi’s Whole Grain bread made with my large heart pocket sandwich maker. I used the heart picks to skewer all the surrounding yummies. Mini tomatoes on either side and raspberries and blueberries are around the sandwich. In the top left compartment are 2 Crimson Gold organic mini apples and in the top right are honeydew pieces with a fruit leather heart on top packed in her Easy Lunchboxes container.
My 2 year old has a short morning at preschool which includes an early lunch. We were having issues with her filling up on the school snacks so I began bringing a few pieces of fruit each week to share with the class. It turns out all the kids like it, and they’re all eating healthier. Her lunch today is packed in a LunchBots Quad. From the top left are almond butter mini hearts made with Rudi’s brand Whole Grain bread, blueberries, green pears and apple hearts and raspberries. Both girls have ice water with their lunches.

I am fortunate enough to have been on the list of people who were chosen to try out the new CuteZCute cutter for fun sandwich and bento faces. I have to say I’m super impressed at the easy of use and cleaning and the adorable, fun lunches in about 5 minutes flat. I can’t wait to let my 4 year old make her own lunches with it. For the affordable price it also will make for super cute gifts for the holidays too! All these tools come in 1 box.

The panda face is on Rudi’s whole grain bread with a Stretch Island fruit leather face. The sandwich is on a bed of brown and wild rice with grape tomatoes and sugar snap peas. At the top left are grapes in a flower shape with a piece of panda baran (food separator) for decoration. at top right is a clementine orange I colored a panda face with a marker & peeled the ears up for fun. The lunch is packed in her Easy Lunchboxes container.
Miss G’s snack today was strawberry hearts, panda face shaped cantaloupe pieces and apricot mango soy yogurt in the round container in her Happy Tiffin bento.
Even Miss A gets a small version with the pig cutter. On the left side of her LunchBots Duo are pieces of cantaloupe, pluots, and below in the white pig silicone cup are watermelon pieces. Above the sandwich on the right is a small pig container with dried cranberries in it and sugar snap peas. The sandwich is simply whole grain bread with almond butter on the bottom and strawberry jam on the top so that it squishes through for color.

If I haven’t raved about them enough, The LunchPunch makes some of the greatest sandwich cutters out there. They are cute, they waste little bread, they’re sturdy and they save SO much time with lunches! This one is Rudi’s Nut and Oat bread with a pumpernickel dog piece in the middle. I used bread crust for his collar and the flowers cutouts are from the apple at the top left and a tree trunk pick. On the dog picks on either side are green seedless grapes. The top left is an apple tree with flower cutouts and more green grapes underneath. At the top right are watermelon fire hydrants because we all know dogs are drawn to them!
Miss G’s snack today is sugar snap peas, grape tomatoes and mini carrots.
And Little Miss A is doing the letter C this week so the topic of the week was the circus. From the bottom left is a round clown face sandwich. The eyes are vegan chocolate chips, the nose is a dried apricot, the cheeks are raspberries, the mouth is Stretch Island fruit leather and the hair is Shirataki brand tofu pasta. The hat above is watermelon and cantaloupe triangles surrounded by green grapes. At the top right are mini carrots and a honeydew melon elephant with a pick hat. Thank goodness I put it on my calendar. I check my schedule last night, and Miss G’s school is celebrating International Peace Day today. At first, I had a good laugh over what’s NOT appropriate for a kid’s lunch box that reminds me of peace and the 60s. Cheech & Chong movies, protests, stinky hippies, a lot of grass (and I don’t mean to walk on) and some really good music I will pass on to my kids some day. But for now, I decided on the basic peace sign lunch.
At the top left are barley and brown rice and black beans on top. At the top right are blackberries, raspberries and a strawberry. The peace sign is cantaloupe and piel de sapo is the greenish white melon. It’s also called a Santa Claus melon and tastes a lot like honeydew. I used a cookie cutter to cut the melon. The PEACE letters are Stretch Island fruit leather. The heart and Have A Nice Day sandwiches are Rudi’s Whole Grain bread with almond butter and sliced berries with fruit leather faces packed in her Easy LunchBoxes container.
In all seriousness, I think it’s great that they’re teaching 4 year olds about respecting others from all walks of life and all nations. Being kind to others always goes a long way in accepting even when we don’t understand.
Miss G’s snack today is a sliced nectarine surrounded by more melon pieces. In the round container is So Delicious brand coconut milk strawberry yogurt packed in her Happy Tiffin stainless container.

In a rush for fun lunches? My go to is always the stash of cookie cutters. These sandwiches are made from linzer cookie cutters which have interchangeable shapes in the middle.
As far as children go, they aren’t any different than adults. They like their food to be pleasing to the eyes. If it looks fun and colorful, they are more likely to try it and eat it! Above is my 4 year old daughter’s lunch. The Rudi’s brand whole grain bread sandwiches are filled with almond butter & strawberry jam. The cut out shapes came with my linzer cookie cutters. Near the sandwiches are mini carrot pieces, cashews and dried cranberries. At the top left are raspberries and the top right are d’anjou pear pieces packed in her Easy Lunchboxes container.
Miss G’s afternoon snack packed in her Happy Tiffin brand stainless container is Amande brand almond milk yogurt in the bottom with a Stretch Island fruit leather bird. Above are more d’anjou pear pieces. The birds on the outside look like honeydew melon. I actually found a new melon at the local organic market this weekend called Piel De Sapo. It looks like the shape of a honeydew with the skin of a watermelon. It is a bit sweeter than honeydew & delicious! I may go back & buy another one before they’re gone.
My 2 year old likes to have everything bite sized otherwise it ends up being picked over and left. This morsel-sized lunch is packed in her LunchBots Quad stainless container. Clockwise from the top left are piel de sapo melon flowers, d’anjou pear pieces, flower sandwiches are Rudi’s whole grain with almond butter & jam, and mango flowers.
My favorite part of packing lunches every day is knowing that there is no waste. No disposable plastic bags as the silicone cups and Easy Lunchboxes compartments do the work for me. I send the girls and my husband with cloth napkins and reusable napkins each day, and they all take their water bottles which can be refilled thoughout the day.
My husband has leftover dinner from last night. I made the Engine 2 Diet’s plant based Sweet Potato Lasagna. I think it looked prettier on the plate last night.
And below are the leftovers with nectarines and carrot sticks packed to go for lunch at the office.

We officially love fruit in this house if you couldn’t tell. Lots of yummy options for snacks. Today Miss G (4) has a nectarine halved with a Stretch Island Fruit Leather “F” in the middle. It’s surrounded by organic, local mango pieces in her Happy Tiffin stainless container. Blueberry flavored So Delicious brand coconut milk yogurt is in the bottom round container.
For lunch we have a new bento box. It’s a hot pink Lego box with 2 tiers.
The top tier was filled with strawberries, dates in between the flowered cups and sliced kiwi. The bottom was small strips of Rudi’s whole grain sandwiches, soy ravioli and a heart container filled with dried cranberries.
And Little Miss A had nectarines, blueberried and a mango F for her fruity afternoon snack.

Monkey business

This week is jungle week at preschool summer camp for the girls. They are obsessed with monkeys already. I happen to think it’s because they can relate to their behavior at 2 & 4. They’re wild, they like to run around and make tons of noise, throw things, and thank goodness they’re cute…what’s not to like?
Miss G is having a monkey face. I used a biscuit cutter for the top part of the head and a large oval (Easter egg) cutter for the mouth portion of the sandwich and trimmed the edges a bit. Then I used a smaller circle cutter for the ears. It’s all made from Rudi’s Honey Wheat bread and filled with Justin’s Almond butter and strawberry jam. I used the almond butter to stick on the fruit leather mouth, nostrils and pupils. The eyes are Vegan brand cheese. The face is on 2 romaine leaves and there are halved prunes underneath to prop up the ears and mouth & keep them from falling. I also included heart shaped strawberry halves. At the top left are plum sections with a piece of monkey baran (food separators) and at top right are watermelon squares with another monkey packed in her Easy Lunch Box container.
Little A is having a monkey swinging from a broccolini tree. I used a cookie cutter for this one and made the face from Stretch Island fruit leather. I also cut “bananas” from pineapple chunks. Miss G and I have a severe banana allergy so we can’t have the real thing in the house. I hung the bananas in the tree along with a monkey pick. Underneath the monkey are crinkle cut sugar snap peas for the jungle floor packed in her Easy Lunch Box container.
My husband’s salad is very orangey today. Orange foods are full of the antioxidant carotenoids which help reduce inflammation, enhance the immune system and are a great source of vitamin A for things like healthy skin and vision. He has baby bok choi and other mixed baby greens. On top are sliced orange bell peppers, Daiya vegan cheese shreds and carmelized walnuts around the sides. At the top left are cashews underneath dried apricots. At the top right are watermelon squares, a heart cut out of the middle is filled with pomegranate seeds packed in his Easy Lunch Box container.
